Street food vendors sell these freshly made roasted chickpeas in paper cones. They are called Dry Chole. Full of earthy, spicy flavors and oh so delicious!

Are crispy roasted Chickpeas keto / low carb ?
No. Chickpeas or garbanzo beans do not fit under Keto / Low carb diet. Even though they are excellent source of protein and fiber, they are full of carbs.
Can roasted chickpeas be stored ?
I prefer to use these crispy roasted chickpeas freshly made. You can however make a big batch and store them. Make sure they are completely cooled down before storing them in air tight container. They can easily last up to 2 weeks. No refrigeration needed.
Should I remove the skin of chickpeas before roasting?
It is a personal preference. Removing skins helps in drying the chickpeas quicker since there is no moisture trapped inside. Also sometimes, the bits and pieces of skin burns off which is not pleasant to taste.
Can I make Spicy Roasted Chickpeas oil free ?
Yes. Adding a splash of oil helps with retaining the moisture and not turning them super dry. However, if you are following Whole Foods Plant Based ( WFPB) – no oil diet, you can skip adding oil.

Can I use dry chickpeas ?
Yes. Soak the dry chickpeas / garbanzo beans in ample water overnight. Next day rinse and drain all the water. Dry the soaked beans fully. Use same temperature to roast / air fry them. It will need about 10 minute extra time compared to canned ones.

- To reduce the cooking time, make sure to dry the chickpeas thoroughly.
- Add the seasoning right after roasting is done. Spices and seasonings burn quickly and taste bitter. So, do not roast with them.
- Do not over crowd the chickpeas on the air fryer basket or baking sheet. Allow some space for steam to escape.
- Check halfway through baking and shake the pan so they get evenly dry without burning.
- Air Fryer and Oven brands vary significantly. The exact cooking time also varies accordingly. So, do check the doneness of your chickpeas after 10-12 minutes.
- Over roasted chickpeas get super dry and hard on teeth to eat. Try to keep them crisp with little moist center for perfect texture.

How To Make Roasted Chickpeas in Air Fryer or Oven?
- Drain the can of chickpeas in the colander. Rinse them well under running water. Arrange them on kitchen towel or thick paper towels and allow to dry completely.
- You can also remove the skin if you prefer. It helps getting them crisp quicker.
- Spread the dried chickpeas onto a baking sheet. Drizzle with olive oil and sprinkle salt. Stir to evenly coat. Make sure they are not overcrowd on the sheet.
- Bake (375 F ) or Air Fry (350 F) for 12-15 minutes. Check the doneness after about 10 minutes.
- The chickpeas are done when golden brown in color and crispy crunchy on the outside.
- Remove from the oven. Sprinkle the spices / herbs / seasoning over the warm roasted chickpeas and stir to coat. Enjoy !

Crispy Roasted Chickpeas - Air Fryer Masala Chana
Ingredients
- 2 15-ounce cans chickpeas ( total 30 ounce - 3 cups)
- 2 Tablespoons olive oil or use oil spray
- ½ teaspoon salt - I used Himalayan Pink Salt
Optional Seasoning
- 1 teaspoon Garam Masala
- ½ teaspoon smoked paprika or red chili powder

Prepare The Chickpeas :
- Put the canned chickpeas in the colander and rinse well under running water. Thoroughly drain them. Spread them either on a paper towel or kitchen towel and allow to pat dry as much as possible.
Air Fryer Instructions :
- Place chickpeas in an Air Fryer basket. Set temperature to 350 degrees Fahrenheit and timer to 15 minutes.
- After 5 minutes, open the basket and spray chickpeas with salt and oil and shake the basket. Close and continue air frying.
- Around 15 minutes, chickpeas are done. Remove them from the air fryer basket and place in a bowl. Sprinkle the seasoning and some oil spray on the chickpeas and stir to combine. Serve and enjoy.
Oven Instructions :
- Pre heat the oven at 375 F.
- Place the chickpeas in a large baking sheet. Spray some salt and cooking oil. Arrange them in a single layer. Do not over crowd them.
- Put the baking sheet in the oven middle rack for 15 minutes. Check after 8-10 minutes and gently toss them a bit for even roasting.
- Around 15 minutes they should be golden brown and crispy. Check the doneness and remove the sheet from the oven.
- Sprinkle the seasoning and salt and some oil spray. Toss it well so it coats evenly. Enjoy !
- Let it cool completely. Store in air tight container.

I tried these today, and straight out of the air fryer they were crispy and delicious, a few hours later and they are a bit chewy. Have I not cooked them long enough?

They do get hard within few hours if you leave them out on the counter or outside. So eat them once you make them or store in air tight jar as soon as they cool down. Hope this helps

These are my favourite snack! However I also found they went soft after some time and so I asked an Indian friend of mine who was the first to introduce these to me, she said they are absolutely the best when dry roasted – and seasoned after cooking. So I tried them without the oil, and seasoned them when they were cooked and they were the best Ive had them. Apparently the oil keeps them moist longer and the salt holds the moisture inside them pea. This works great for any legume, peas, beans of any description – my nieces and nephews eat them by the bucket load and they HATE peas and beans any other way. A great snack for body builders or just anyone watching their weight – especially when dry roasted as it cuts out ALL the oil!
