    This Potato Masala Recipe makes the best South Indian potato filling for the dosa. Cooked potatoes are stir-fried with onions, green chilies, ginger, curry leaves, and turmeric to create a lightly spiced, flavorful masala dosa stuffing. This vegan and gluten-free potato masala is easy to prepare on the stovetop or in the Instant Pot.

    What is Potato Masala? (Also Called Aloo Masala, Batata Bhaji, Potato Bhaji, or Masala Dosa Bhaji)

    Potato Masala, also called Aloo Masala for Dosa, is a lightly seasoned South Indian potato curry made primarily for stuffing masala dosa.

    Unlike North Indian potato curries, this version is intentionally dry. The potatoes are mashed lightly instead of being cooked in gravy. Turmeric gives the filling its beautiful yellow color while mustard seeds, curry leaves, ginger, and green chilies provide authentic South Indian flavors.

    Ingredients

    • 5 medium potatoes — Yukon Gold or Russet potatoes work best; boil until tender and lightly mash.

    Tempering

    • 2 tablespoons oil — Use avocado, sunflower, or any neutral cooking oil.
    • cumin and mustard seeds — The classic tempering ingredients.
    • 1 teaspoon urad dal — Adds a light crunch and nutty flavor.
    • 10–12 curry leaves — Fresh curry leaves give the dish its signature earthy aroma.

    Flavors

    • 2 medium onions, thinly sliced — Cook until soft and translucent for a naturally sweet flavor.
    • 2–3 green chilies, finely chopped — Adjust the amount based on your preferred spice level.
    • 1 tablespoon fresh ginger and garlic, minced — Adds warmth and a fresh, slightly spicy flavor.
    • ¼ teaspoon asafoetida (hing) — Adds savory depth; use gluten-free hing if needed. Optional
    • ½ teaspoon turmeric powder — Gives the potato masala its classic golden-yellow color.
    • ½ teaspoon red chili powder — Adds the spice. Adjust per spice tolerance.
    • Juice of ½ lemon — Balances the spices and adds a fresh tang.

    Garnishes

    • 2 tablespoons grated coconut, optional — Adds a subtle soft and creamy texture.
    • ¼ cup fresh cilantro, chopped — Adds freshness and a bright herbal finish.

    Best Potatoes to Use

    Starchy potatoes work best. Choose Yukon Gold, Russet or Idaho potatoes. They mash beautifully while still keeping some texture. Avoid waxy potatoes because they stay firm and don't absorb flavors as well.

    How to Make Potato Masala (Stovetop)

    Boil the potatoes until fork tender. Cool slightly. Peel and roughly mash them.

    Heat oil in a large skillet. Add mustard and cumin seeds. Allow them to splutter. Add urad dal. Cook until lightly golden. Add curry leaves and asafoetida. Cook for a few seconds.

    Add onions. Cook until soft but not deeply browned. Stir in minced ginger, garlic and green chilies. Cook for another minute. Mix in turmeric, red chili powder and salt.

    Add mashed potatoes. Mix gently until everything is evenly coated. If the mixture feels too dry, sprinkle in 2–3 tablespoons water. Cover and cook for another 3–4 minutes. Turn off the heat. Add cilantro and lemon juice. Mix well. Serve warm.

    How to Make Instant Pot Potato Masala

    This method saves time because you can cook the potatoes and prepare the tempering in one pot.

    Peel and dice the potatoes into 1 inch cubes (3 to 4 cups). Set the Instant Pot to saute (more) mode and heat oil. Add mustard and cumin seeds in the oil and allow them to pop (2-3 minutes). Then add onions and sauté for 2 minutes.

    Add turmeric, green chilies, minced garlic, ginger, and curry leaves. Saute for 30 seconds. Press Cancel. Add potatoes, red chili powder, salt, and water. Mix well. Deglaze the pot if needed. Close the Instant Pot lid with pressure valve to sealing. Pressure Cook for 4 minutes followed by quick release after 5 minutes.

    Open the Instant Pot lid. Lightly mash the cooked potatoes. Add lemon juice and cilantro. Mix gently and enjoy hot.

    Storage

    Refrigerator: Store in an airtight container for up to 4 days.

    Freezer: Freeze for up to 2 months.

    Thaw overnight in the refrigerator. Reheat gently in a skillet or microwave.
