What Makes This Hungarian Goulash Special?
Traditional Hungarian goulash is known for its rich paprika flavor and comforting stew-like consistency. This vegetarian Hungarian goulash keeps those familiar flavors while replacing meat with tofu.
The tofu absorbs the savory tomato and paprika broth. Potatoes make the stew hearty and naturally thicken the sauce as they cook. It is a simple, wholesome meal that appeals to vegetarians and anyone who enjoys a good homemade stew.
Vegan Hungarian Goulash Ingredients

- Tofu: Use firm or extra-firm tofu. It adds plant-based protein and absorbs the delicious spices.
- Potatoes: These make the goulash hearty and filling. Yukon Gold or russet potatoes work well.
- Onion: Builds a sweet and savory flavor base.
- Vegetables: I often add mushrooms, carrots and bell peppers to the hearty stews. These are optional. You can add your favorite vegetables or leftover veggies from fridge.
- Tomato sauce: Add natural acidity, richness, and body to the stew.
- Hungarian sweet paprika: The signature seasoning in Hungarian goulash. It gives the dish its beautiful color and distinctive flavor.
- Garlic and other seasonings: Add depth and warmth. Black pepper, salt, bay leaf and seasoning salt are my favorites.
- Vegetable broth or water: Creates the flavorful stew base.
How to Make Vegetarian Hungarian Goulash
1. Prepare the tofu.
Drain and press the tofu to remove excess moisture. Cut it into bite-sized cubes. You can lightly pan-sear the tofu until golden for extra texture. You can also air-fry it at 300 f for 10 minutes.

2. Sauté the onions and vegetables.
Heat oil in a large pot or Dutch oven. Add chopped onions and sauté until soft and translucent. Add garlic and vegetables if using, and cook briefly for couple minutes.
3. Add tomato sauce and seasonings.
Stir in tomato sauce, bay leaf, sweet paprika, salt, black pepper, and your preferred seasonings. Cook for 2-3 minutes to form a flavorful base.
4. Cook the potatoes.
Add cubed potatoes and vegetable broth or water. Stir well. Cover and simmer until the potatoes are almost fork-tender.
5. Add tofu and finish cooking.
Gently stir in the tofu cubes. Simmer for another 5–10 minutes so the tofu absorbs the flavors. Adjust the seasoning and consistency to your liking.

6. Garnish and serve.
Finish with fresh parsley or chopped cilantro. Serve hot with crusty bread, rice, or noodles.
