I often keep Hatch Valley Green Chili Salsa in the pantry. So making this green chile stew recipe is as easy as putting everything together and letting it simmer.
Ingredients
Beans: I am using white beans, which are also called great northern beans or navy beans. You can however, use other beans like kidney beans, black beans as well.
Vegetables : Adding chunks of large potatoes make this stew hearty and satiating. For flavors, I add mirepoix which is onion, celery and carrots. Tomatoes add tangy flavors to the sauce.
Green Chile Salsa : I am using Trader Joe’s Hatch Valley Salsa made with fire roasted green chile called hatch chiles or hot green chili peppers from the Hatch Valley. This salsa is smoky, flavorful and adds a nice spice kick to the stew. You can use any green chile salsa or Southwestern green salsa or salsa verde.
Other Ingredients : I am using little vegetable oil to sauté things however it is optional. Bay leaves, roasted cumin powder and lemon pepper seasoning are other ingredients.
How to Make Vegetarian Green Chili Stew
- In a large pot or dutch oven, heat olive oil over medium-high heat. Add diced onion and minced garlic, sauté until translucent.
- Stir in diced potatoes, rinsed canned beans. diced tomatoes, vegetable broth, ground cumin, and dried oregano. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Stir in green chile salsa. Adjust the salt and pepper and adjust the seasoning.
- Once cooked, serve hot, garnished with chopped fresh cilantro and lime wedges on the side.
How to Make Instant Pot Green Chile Stew
Put all the ingredients in the main insert of the Instant Pot. Mix well. Close the lid. Choose 10 minutes on high pressure setting. Let it come to pressure and cook. After it’s done cooking, wait for 10 minutes to release the pressure. Stir well. Adjust the seasoning and serve hot with your choice of toppings. Enjoy !

- Salt and pepper to taste
