This airfryer potato recipe needs very little prep work, only 5 main ingredients and 20 minutes to make. However, it is amazingly delicious! What are fingerling potatoes?
Fingerling Potatoes are elongated small potatoes typically the size of a finger.
They have thin skin which doesn’t need peeling. These potatoes have a firm texture that holds up well to cooking.
When you roast them in an air fryer or in the oven, the skin turns golden brown and becomes crisp. They remain tender and buttery inside.
You can roast them whole or just cut them in half. They’re the perfect size for finger food – easy to hold, dip and eat.
Should I roast them whole ?
I prefer to cook them whole and then cut them in half while serving. It helps to retain the moisture inside and prevents them from getting too dry. Air fryer version is effortless & time saving.
How not to burn seasoning while air frying?
Seasoning, especially dry herbs burn quickly and taste bitter if you add them from the beginning. So add all your flavorful seasoning just after they come out of the oven or air fryer.

Exact measurements are listed in the recipe card below. Fabulously crisp fingerling potatoes, Parmesan cheese, parsley, olive oil, garlic, salt and freshly ground black pepper.
- Fingerling Potatoes
- Parmesan cheese or nutritional yeast
- Minced Garlic
- Fresh or Dried Herbs : Parsley
- Olive oil or cooking oil spray
- Salt and freshly ground pepper
Instructions
Preheat an air fryer to 400° degrees Fahrenheit (200 degrees Celsius) for 3 minutes.
Place washed and cleaned potatoes in a mixing bowl. Add olive oil, Parmesan cheese, minced garlic, salt, and pepper and stir until evenly coated.
Place potatoes in the basket of the preheated air fryer and cook for 10 minutes. Open the lid. Shake the basket, spray some more oil mists and cook until desired crispness is reached, about 5 more minutes.
Remove from the air-fryer. Sprinkle the parsley and remaining Parmesan cheese on top. Serve immediately with your favorite dipping. Enjoy !
Pro Tips
Besides fingerling, this recipe will work for any type of small baby potatoes. If you plan to use large roasting potatoes, chop them in wedges or cubes.
Once potatoes are fresh out of the air fryer oven, I sprinkle them with grated Parmesan cheese and parsley. The end result is the taste of roasted garlic, and herby cheese in every bite. It is simply amazing !
I also add some parmesan cheese in preparation before air frying. This helps get a crispy, charred cheese on the potato skin. With a mist of olive oil, it adds nice depth to the flavor quotient.
Organic Fingerling Potatoes
Fingerling potatoes have thin skin and don’t need to be peeled. However, to avoid the pesticides, I prefer to buy them organic whenever possible.
How to avoid uneven cooking in the air fryer?
- Do not overload the basket so that there is enough space for the air circulation. This is most important.
- So, if you have large quantities to prepare, cook in batches.
- Also, give it a shake in between cooking to rearrange the pieces.
How To Prepare Potatoes for Cooking
Since we are not peeling and removing the skin, wash the fingerling potatoes in the colander thoroughly under clear running water. Scrub if there is any dirt, dark spots or extra tuber growth on the surface.
After washing, pat them dry completely with a kitchen towel. No moisture should remain. This is important to get them nice and crispy.
How to reheat ?
Arrange them in a single layer on the airfryer basket. And re-heat in the air-fryer for 4-5 minutes at 350°F.
Can I Double The Recipe?
Yes you can. However, don’t cook at once. Make them in separate batches so the potatoes cook well and get golden crisp.

- 3-4 Garlic Cloves minced
- 1 tablespoon Chopped parsley
