    Instant Pot Roasted Masala Potatoes

    Instant Pot Roasted Potatoes are our family favorite super favorite side dish. Dinner time, snack time – any time is good time to dig into these delicious baby potatoes.

    Roasted Masala Potatoes

    Who doesn’t like bit of spicy, bit of salty addictive warm potatoes? And if they are super easy to make -even better right? Simply Da Best ! Similar to Air Fryer Breakfast Potatoes and Air Fryer Crispy Fingerling Potatoes, these are on the repeat on our dinner sides.

    Easy Side Dish

    We love variety of crispy vegetables as side dish to complement the main meal. Air Fryer Asparagus, Crispy Air fryer Mushrooms, and Roasted Broccoli in Air Fryer are all wonderful side dishes besides these roasted instant pot masala potatoes.

    I often buy a bag of these cute baby potatoes at the Trader Joe’s and make this super delicious recipe. These small potatoes do not require peeling which is a major plus. Simply mix them up with oil, salt, pepper, and seasoning of your choice.

    Vegan Potato Recipe

    This recipe makes vegan roasted potatoes that also are gluten free. You can bake them in the oven or cook them on stove top. Or you can even make them in Instant Pot. They are a perfect vegetable side dish.

    My family loves potatoes in any form. Creamy Potato Soup, Delicious Potato Salad and Cheese Potato Poppers, these are our kid friendly family favorites. We also love variety of Indian Potato Curry recipes including Aloo Matar ( Potato and peas curry) Dum Aloo ( Creamy baby potato curry) and Aloo Baingan ( Potato Eggplant Curry)

    What is Masala Potatoes

    There are no fancy ingredients or difficult directions to follow. Just a good old recipe for delicious roasted masala potatoes. In case you are wondering what is masala – it is Indian name for spices. Just like chai (tea) became main stream name, masala is fast becoming main stream name too.

    The seasonings used to make this Potato Side dish is a mix of Indian curry spices. What I did was just sprinkle an even layer of salt, pepper, and garam masala over the potatoes.

    If you want to get creative and add additional herbs/spices, go for it. I often make them with Italian Seasoning if we are eating pasta. Or toss in some Taco Seasoning when the mood calls for fiesta!

    Baby potatoes are quick to cook and take only 20 minutes from prep to dinner. Just try to get smallest potatoes you can find so they cook evenly.

    Dry Roasted Potatoes

    The best part of this Roasted Masala Potatoes recipe is that the potatoes are seasoned with a mix of dried herbs, loading them with superb flavor. The potatoes are crispy on the outside and tender on the inside.

    If you are making them in InstantPot, you have to Sauté them first. It gives them that lovely golden crispy skin.

    This is a restaurant worthy side dish, with hints of mint and spices that would go well with so many dishes. As chilly weather sets in, I make these potatoes for after school snack too.

    My kids love them in different seasoning and I love to surprise them often 🙂

    Roasted Masala Potatoes is also a nice appetizer that can be served during parties or family dinners.

    Roasted Masala Potatoes InstantPot

    Ingredients

    • 2 pounds small potatoes, about 10 potatoes
    • 1 teaspoon garam masala or curry powder
    • ½ teaspoon red chili powder
    • 1 teaspoon dried mint leaves
    • 1 teaspoon kosher or pink salt
    • 2 tablespoons olive oil
    • ½ cup water (Only if using Instant Pot Method)

    Instant Pot Instructions

    Wash and clean the potatoes and pat dry well. Using a fork, pierce the middle of each potato few times. In a small bowl, combine all seasoning together.

    PRESS the SAUTE mode button on the Instant Pot. When HOT appears on the display, add oil and rotate the main insert slightly so oil coats the bottom of the pot well. Add potatoes in batches and arrange in a single layer.

    Let them roast in the pot for 3-4 minutes. When they are browned at bottom, roll them upside down , making sure the potatoes are lightly brown and crispy on all sides. Total about 6-8 minutes.

    Toss in herb seasonings. Make sure it coats the potatoes well. Transfer the potatoes in steamer basket. Add water in main insert. Place the steamer basket in the main pot.

    Press KEEP WARM/CANCEL button. Close and lock the lid, set floating valve on SEALING. Press the manual button, cooking time to 6 minutes.

    Once done, use quick release by pressing CANCEL and then turning the steam floating valve on the lid to VENTING position. Open lid and transfer potatoes to serving platter. Serve hot.

    Stove top Directions

    Heat oil in the pan on medium high heat. I prefer to use Cast Iron Skillet which gives it nice color to the roast. Now add potatoes and cover and cook on medium heat for 10-12 minutes.

    Rotate them in between so they brown up all around. Remove the lid. Toss in seasoning. Make sure it coats well. Cook for another 3 mins. Pierce the fork in the middle of the couple of potatoes. If it goes smoothly and feels tender they are done! Transfer potatoes to serving platter. Serve hot.

    How to Make Oven Roasted Masala Potatoes

    Combine the oil and seasoning together. Toss it over washed potatoes very well. Arrange the potatoes in a single layer on the baking sheet lined with parchment paper. Put in preheated oven at 375 F.

    Check and rotate the potatoes every 15 mins so they crisp up well. Potatoes should be done in 45 mins or so. Pierce the fork in the middle of the couple of potatoes. If it goes smoothly and feels tender they are done.

    Transfer potatoes to serving platter. Serve hot. Enjoy !
