These Gujiya Bites Puff Pastry are my shortcut take on a classic Indian festive sweet. They have everything I love about gujiya. Sweet coconut. Fragrant cardamom. A touch of saffron. And a crisp, flaky pastry shell.

But there is no need to make gujiya dough from scratch. For this fusion version, I use store-bought puff pastry and cook the little pastries in the air fryer (or bake in the oven) The result is golden, flaky, bite-sized treats that feel festive without a lot of work.
Traditional gujiya is especially associated with Holi and is also enjoyed during Diwali and other Indian festival celebrations. Regional versions are known by names such as Karanji and Ghughra. This recipe takes that familiar idea and gives it a modern puff pastry twist.

What Are Gujiya Bites?
Gujiya is a traditional Indian sweet pastry usually shaped like a half moon and filled with a sweet mixture. Classic versions often use khoya or mawa along with coconut, nuts, sugar and cardamom.
My version is different.
Instead of making a traditional flour-based gujiya shell, we use puff pastry sheets. Think of them as mini Indian dessert turnovers with the flavors of gujiya.
That is what makes this recipe so fun. It is familiar enough for a festive Indian celebration. Yet different enough to surprise your guests.
Ingredients You’ll Need
Puff pastry forms the flaky outer layer. Use frozen puff pastry and thaw it according to the package directions. Keep it chilled until you are ready to work with it.
Coconut gives the filling its classic Indian sweet flavor. I recommend unsweetened desiccated coconut because you can control the sweetness. If possible, use freshly grated coconut. You can also use frozen shredded coconut. Make sure to thaw it before using.
Sugar sweetens the coconut mixture. You can use jaggery for earthy taste.
Cardamom is essential here. Freshly ground green cardamom gives the filling a beautiful floral aroma.
Saffron adds a subtle luxurious flavor and those pretty golden flecks. You only need a small pinch.
For finishing, use a little melted butter or ghee to brush over the puff pastry before air frying.
How to Make Gujiya Bites

1. Make the coconut filling.
Add the desiccated coconut to a dry pan and toast on medium-low heat for 1–2 minutes until lightly fragrant. Mix with sugar, cardamom powder, and a small pinch of saffron. Cook for another 3-5 minutes on very low heat stirring frequently. Remove from the heat and let it cool. Set aside.
2. Prepare the puff pastry.
Unroll the thawed puff pastry and cut it into 3 equal sections along the fold lines. Roll each section gently to make it slightly wider. Place 2–3 tablespoons of the coconut filling in the center, leaving some space around the edges.
3. Shape the gujiya bites.
Fold the pastry over the filling and press the edges firmly to seal. You can crimp the edges lightly with a fork for a decorative finish. Repeat with the remaining pastry. Place the filled pastry logs in the freezer for 15 minutes to firm up.
4. Air fry until golden.
Cut each chilled pastry log into 6–8 bite-sized pieces. Arrange them in a single layer in the air fryer basket, leaving space between each piece. Air fry at 350°F for 8–10 minutes, or until puffed and golden brown. Let them cool slightly before serving.
My Tips for Perfect Puff Pastry Gujiya
Don't overfill them. This is probably the most important tip. Too much filling can make the pastry difficult to seal.
Keep the puff pastry cold. Warm pastry becomes sticky and is harder to shape.
Seal the edges well. Press firmly with a fork. This also gives the gujiya bites a pretty decorative edge.
Don't overcrowd the air fryer. Cook in batches if necessary. You want the hot air to move freely around each piece.
Watch the last few minutes. Puff pastry can go from golden to too dark surprisingly quickly.
Let them cool slightly. The coconut filling continues to set as the pastries cool.
Make Them Extra Festive
These little pastries are already pretty, but you can dress them up for a celebration.
Sprinkle the tops with powdered sugar. Add a few chopped pistachios. Scatter dried rose petals around the serving platter. And top it with little chandi ka varak (edible silver leaves)
You can also add a tiny pinch of nutmeg or vanilla extract to the coconut filling. Golden raisins and almond flour also adds extra richness. Mixing a teaspoon of edible rose water in the stuffing also is amazing.
My Suggestion: Do not mix too many flavors. Most of these flavors are very earthy and potent, so I only recommend using one or two.

Avoid microwaving if possible. It softens the puff pastry.
