The combination of asparagus, cheese, and mushroom in a puff pastry tart creates a delicious blend of flavors that are both savory and satisfying.
Flavors of Rustic Asparagus and Cheese Tart
Asparagus has a slightly bitter and earthy flavor that is often described as grassy or nutty. When cooked, its flavor becomes more subtle and delicate, making it a great complement to the other ingredients in the tart.
Cheese, on the other hand, adds a rich and salty flavor that balances out the bitterness of the asparagus. Parmesan or goat cheese are often used in asparagus tarts, adding a nutty and tangy taste that pairs well with the other ingredients.
Mushrooms, which are also often included in asparagus tarts, add a meaty and earthy flavor to the dish. They have a slightly umami taste that adds depth and complexity to the overall flavor profile.
When combined in a puff pastry tart, these ingredients create a harmonious blend of flavors that are both delicious and satisfying. The flaky and buttery puff pastry provides a light and airy texture that complements the rustic and savory flavors of the filling.

Ingredients
- Asparagus, Mushrooms and Onions for the base of the tart. Use baby bellas or shiitake mushrooms for perfect umami flavor. Choose fresh and tender asparagus spears
- Cheese : I prefer to use gruyere cheese for it’s rich and savory flavors. You can substitute fontina or even goat cheese. I have made it with Italian Cheese mix which also works just fine.
- Puff Pastry : I am using store-bought puff pastry sheets. Thaw your puff pastry sheets on the counter so it’s easy to roll.
- Other ingredients and seasoning : I love melted butter, garlic and Italian herbs based spread. You can also Basil Walnut Pesto Sauce as a spread.
- Optional Ingredients : You can spread cream cheese mixed with lemon juice and lemon zest and dijon mustard for additional flavors.
💡💡Pro Tip : I do not use eggs or egg wash for this recipe. Just the layer of cheese on top is amazing to bring out the buttery crust.
How to Make
Basic Preparation
Preheat oven to 400 degrees Fahrenheit.
To prepare the asparagus, snap off the tough ends and discard them. Clean the stalks under cold running water thoroughly to remove all the sand trapped in the stalks. Clean the mushrooms and cut them into bite sized pieces. Finely chop white onion.
Sauté the vegetables
In a large pan, over medium heat, add olive oil. Add chopped onion. Sprinkle some salt over it. Sauté on high for few minutes.
Add chopped mushrooms to the pan. Sauté for few minutes. Mushrooms will start releasing the moisture and turn dark in color.
Add chopped asparagus. Add Seasoning . Continue to sauté on medium-high heat for 2-4 minutes until mushrooms start to release water. Turn off heat. Let them cool off for 10 minutes.
Prepare the Puff Pastry to make the part
Thaw your puff pastry on the counter so it’s easy to roll. Line a baking sheet or sheet pan with parchment paper.
Use a rolling pin to gently roll out puff pastry on a lightly floured surface, make it fitting the rectangle, then transfer to the parchment-lined baking sheet. Using a fork, pierce some holes on the dough.
Prepare the Tart
In a small bowl, mix together melted butter, minced garlic and Italian seasoning and black pepper. Spread the garlic butter mixture on the rolled puff pastry using a pastry brush. Add the sautéed veggies over the pastry sheet. Leave about 1-inch border free for expansion. Sprinkle cheese over the top.
Bake The Asparagus Puff Pastry Tart in the oven
Put the puff pastry prepared baking sheet in the preheated oven. Bake tart for 20-25 minutes or until the crust is golden brown and flaky.
Slice into pieces. Sprinkle cheese as a garnish and serve warm. Enjoy !
Pro Tips : Leftovers can be stored in the fridge in airtight container for 3-5 days. I prefer to sauté asparagus with seasoning for tender texture and robust flavors instead of boil-drain, and ice water bath method.
How to Make Air Fryer Asparagus Tart
If using air fryer, roll the puff pastry tart on air fryer basket ( depending upon the size and shape of your air fryer ) lined with silicon mat or perforated parchment paper.
Air fry at 350 degree Fahrenheit for 10-12 minutes until the crust is golden brown and flaky. Slice into pieces. Sprinkle cheese as a garnish and serve warm. Enjoy !
