    These delicious bite-size cheesecake treats are made with store bought Phyllo Shells and creamy cheesecake filling. Served with fresh berries for a tangy-sweet topping, they make a show stopper party dessert.

    The red, white and blue colors make it perfect for all patriotic holidays through summer, be it memorial day or 4th of July celebrations. Similar to Frozen Yogurt Bark , this is our household favorite summer recipe.

    These bite-size phyllo cups filled with creamy pudding and topped with fresh fruit get their rich creaminess from cream cheese. They’re perfect for when you’re craving something sweet.

    A delicious and impressive cheesecake recipe that you can make without spending too much time in the kitchen. This mini Cheesecake with berries has all the elements of traditional cheesecake. Yet it is so easy and convenient to make in an Air Fryer or oven.

    This divine berry cheesecake uses the ingredients that are simple, inexpensive and easy to find in regular grocery stores. That makes it truly the best mini dessert!

    Ingredients

    • Phyllo pastry shells or cups – They are often sold in freezer section of most grocery stores
    • Cream cheese – bring it to room temperature before using
    • Sugar – white sugar or brown sugar either works
    • Yogurt
    • All purpose flour
    • Vanilla extract
    • Lemon juice
    • Berries – Strawberry, blueberry, raspberry

    How to Make

    Preheat oven to 325 degree Fahrenheit.

    Combine softened cream cheese, yogurt, sugar and flour in a medium mixing bowl. Blend in lemon juice and vanilla extract.

    Arrange Phyllo cups on a parchment paper on baking sheet. Pipe or spoon above cheesecake batter equally in all the cups.

    Place the baking sheet in the middle rack of the oven. Bake for about 12-15 minutes or until the batter is set.

    Once baked, remove promptly and let it cool completely.

    Decorate the cheesecake cups with your favorite berries. Enjoy!

    How to make cheesecake phyllo cups in Air Fryer

    Combine softened cream cheese, yogurt, sugar and flour in a medium mixing bowl. Blend in lemon juice and vanilla extract.

    Arrange Phyllo cups on parchment paper on a baking sheet. Pipe or spoon above cheesecake batter equally in all the cups.

    Place them on air fryer basket and air fry at 325 degree Fahrenheit for 8-10 minutes or until the cheesecake is set and no more runny.

    Let stand for few minutes till completely cooled before adding toppings and serving.

    How to make Instant Pot Cheesecake Filling

    Combine softened cream cheese, yogurt, sugar and flour in a medium mixing bowl. Blend in lemon juice and vanilla extract. Place this mixture in a pan that fits in the Instant Pot. 6×6 inch pan fits. Cover the pan with a paper towel and aluminum foil, so the condensation does not go into the cheesecake.

    Add 1.5 cups of water to the instant pot steel insert and place a trivet in. Put the covered pan on the trivet. Close the lid. Vent SEALED position.

    Press Manual or Pressure Cook mode. Choose high pressure for 15 mins. When the instant pot beeps, let the pressure release naturally for 10 minutes. Then move the valve to venting to release the leftover pressure.

    Open the Instant Pot and carefully lift the trivet with the pan, and take it out. The cheesecake batter should be set and not runny.

    Let it cool completely. Then spoon the mixture evenly in each phyllo shell. Add berry toppings. Serve and enjoy !

    Substitutions

    Make It Vegan : Make vegan cheesecakes using all plant based ingredients. Use plant based yogurt and cream cheese. Almond or coconut yogurt works best.

    Make it Sugar Free : Use Maple syrup or Honey to make it Sugar free.

    Oven or Air Fryer : I am including timing and temperature for both these options.

    Variations

    Cream Cheese – instead of cream cheese you can use whipped cream, heavy cream or condensed milk.

    Make It Gourmet – Add toppings like chocolate sauce, Nutella or Saffron strands. You can also add Mascarpone cheese and espresso to make it a Tiramisu cheesecake bite.

    Kid friendly – top it up with whipped cream and some sprinkles or M&Ms

    Serving Suggestions

    These mini cheesecakes pair well on a high tea table along with Custard Toast, finger sandwiches, Mocha Cookies and Stuffed Mini Bell peppers with cheese. Serve it with Chai or Hot Cocoa.

    Store the cheesecake in an air tight container in the refrigerator for up to five days. You can also freeze it for a month if needed. You can add toppings just before consuming.

    Pro Tips

    Top the bites with freshly cut fruit or berries, and drizzle some maple syrup or honey on top. Sift or sprinkle some powdered sugar on top. This takes the cheesecake bite to the next level gourmet!

    Serving a dollop of ice cream or whipped cream also tastes heavenly.
