My mom used to make this cake often. All 3 of us sister's weren't that fond of drinking milk while growing up. This was my mom's trick to add milk in our diet.

Dry Ingredients : We use all purpose flour, sugar, baking powder and baking soda. A pinch of salt balances the flavors.
Wet ingredients : This recipe uses unsalted butter, milk, yogurt and vanilla extract as wet ingredients.

Substitutes
- To make this recipe VEGAN, use plant based milk and yogurt and use oil instead of butter.
- For exotic flavors, use ¼ teaspoon saffron or ¼ teaspoon crushed cardamom , or ¼ teaspoon cinnamon powder or ¼ teaspoon nutmeg powder in the batter. You can also use ghee instead of butter.
- If you prefer, you can use 1 egg instead of yogurt. ⅓ cup flaxseed powder can also be added. You can also substitute evaporated milk or heavy cream for richer taste.
Step by Step Instructions
As the name suggests, this cake uses hot (warm) milk in the making process. Here are steps involved to make this recipe .
Heat milk and butter in a small saucepan till butter melts. Do not boil. Add vanilla essence. Turn the heat off and keep the hot milk mixture aside.
Meanwhile in a medium bowl, whisk yogurt and sugar together till it becomes creamy.
Combine flour, baking powder and soda in a large bowl. Add milk-butter mixture to whisked yogurt slowly. Stir to combine properly.
Add flour mixture to liquid mixture and combine well with big spoon or spatula. Do not overbeat the cake batter.
Line a loaf-pan, bundt pan or cake pan with parchment paper. Pour the mixture in the pan and tap 2- 3 times to remove air. Put the prepared pan in the oven. Bake in preheated oven at 355°F for roughly 40 minutes.
Bake until golden brown and a toothpick inserted in the center of the cake comes out clean or with a few moist crumbs! Let it cool completely before slicing.
Frosting and Serving ideas
- Using fresh fruit especially summer berries is always awesome. Cake slices can be dressed up with some whipped cream and lots of fresh strawberries or other berries for a fancy looking gourmet dessert.
- Dusting some powdered sugar is another easy way to add little more drama to the cake presentation. You can lightly glaze it with your favorite glaze. I love fresh lemon glaze for refreshing brightening taste.
