Banana Bread is an all-time classic comfort dessert recipe. Simple ingredients and a mixing bowl is all you need to make this delicious sweet bread/cake.
You don't need stand mixer or even electric hand mixer for this easy baking recipe. Just use regular mixing spoon or spatula. All we need to do is simply mix all ingredients together and bake.
RECIPE INSPIRATION
Ok this Banana bread making happened in my life similar to question "who came first - chicken or egg?" Hehe.. intrigued?
The thing is that hubby and I love all baked goods. We both also have super big sweet tooth. And this being simple but delectable recipe, we always are ready for a BIG slice for breakfast, brunch, snack or after dinner dessert.
And then there are those over ripened brown bananas sitting in the fruit basket. Not so pleasant to eat raw, but oh boy they are gold for baking recipes.. be it cookies, muffins, cakes and even nice creams..
So does Banana bread happen because we have over ripe bananas or bananas get ripen so we can bake this delish bread ! It's anybody's guess :))

SUBSTITUTES
- You can use saffron, cinnamon or pumpkin spice instead of nutmeg.
- If you want to avoid oil, use apple sauce
- All-purpose flour, whole wheat flour or gluten free flour all work well.
- Instead of walnuts, you can use other nuts, chocolate chips or dates.
HOW TO FREEZE BANANA BREAD
You can make multiple loaves and freeze them for later use. They taste very good when defrosted and lightly warmed.
To properly freeze, let the bread cool down completely. Slice it and wrap it tightly in freezer safe cling film. Then wrap in aluminum foil or put it in freezer bag. Pop it in the freezer. It can remain good up to 3 months.
PRO TIPS FOR FAIL-PROOF BAKING
- Measure your flour correctly. (see the detailed note below)
- If recipe involves baking soda, make sure to add some acidic ingredient like apple cider vinegar or lemon juice so the baking soda can rise and bring the fluffy texture.
- Use room temperature ingredients like eggs and butter.
- Many baking recipes fail because we overwhip the batter. Unless the recipe calls for heavy kneading, use very light force and simply mix the batter. Do not over mix.
SPOON AND SWOOP METHOD
How you measure flour for baking makes a world of difference in the success results. More often than not, baking goods turn into dense texture instead of moist and fluffy.
To avoid that, I highly recommend “spoon and swoop” method for measuring the flour.
If you scoop the flour straight from the bin, it often is tightly packed. That creates dense texture. So instead of leveling the cup of flour straight from the bin, let it air out.
- Gently stir your flour with a large spoon to loosen it up.
- Spoon the flour into your measuring cup. Do not scoop.
- Level off the excess with a knife. And don't top it off.
Equipped with these important tips, I think we are ready to get going for this recipe. Let us get baking.
INGREDIENTS
- Over ripe bananas - The yellow bananas with brown dots or patches are perfect
- Dry ingredients: All-purpose flour , flax seed powder, brown sugar , baking soda and chopped walnuts and nutmeg and a pinch of salt
- Wet ingredients: oil or vegan butter, plant based milk, vanilla extract, apple cider vinegar ( to rise the baking soda) and water to make flax egg.
HOW TO MAKE
Preheat the oven to 350 degrees F and grease a standard loaf pan. I used 9 x 5 inch pan.
In a small bowl, combine the ground flaxseed and water. Set aside to thicken; this is your flax egg mixture.
In a large bowl, mash the bananas with a fork until smooth. Stir the oil or melted vegan butter into the bananas.
Now add the apple cider vinegar, almond milk and flax egg mixture. Using a big spoon stir until well combined.
Add the flour and brown sugar to the same bowl with the wet ingredients. Sprinkle the baking soda, salt and nutmeg on top. Stir gently until just combined, making sure you do not over mix.
Gently fold in the walnuts. Pour the batter into the prepared pan. Gently tap the loaf pan on the counter a few times so air bubbles settle.
Place the loaf pan in the center rack of the oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool in the pan for a few minutes, then transfer the loaf to a cooling rack.
Ideally, you should let the banana bread cool for at least 30 minutes before slicing. (I know, this waiting is the hardest part)
Serve warm slice and enjoy.

Dry Ingredients
- 2 cups all-purpose flour
- ⅔ cup brown sugar
- 2 tablespoons ground flaxseed
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon fresh ground nutmeg
- ½ cup chopped walnuts
Wet Ingredients
- 1 teaspoon apple cider vinegar
- 5-6 tablespoons water to make flax egg
- ⅓ cup oil or melted vegan butter
- ¼ cup almond milk or any other plant based milk
- 1 teaspoon vanilla extract

simple strokes to mix everything together. Oven temperatures vary significantly between the brands. So, keep an eye on the bread after 45 minutes. About this time, you start to smell the wafting aroma. You do not want to over-bake it.
