Ingredients
Puff Pastry Sheet : I am using Pepperidge Farm Puff Pastry Sheets with buttery and flaky texture that encases the flavorful filling. They are easily available in major grocery stores in frozen section. Thaw them properly per package instructions before using.
Paneer : Paneer is Indian cottage cheese. It is earthy and creamy cheese that doesn't melt much. I use store bought paneer to simplify making this recipe.
Spices : Green chutney also called Cilantro chutney adds nice herby taste. I also use achari masala ( pickling spices) to spice up the paneer. You can experiment with different seasoning or spice mixes per your choice.
Cheese : I prefer to use shredded mozzarella or Colby jack cheese as a topping. Melted cheese tastes awesome wit this puff pastry.
Other Ingredients : Mist of oil spray helps make golden brown pastry. You can drizzle chaat masala, black salt and chopped coriander leaves on top before serving.
💡💡 I am keeping this recipe super simple and not using too many ingredients. You can however add more vegetables like bell peppers, onions sauteed with ginger garlic paste in mustard oil along with cumin seeds, turmeric powder, kasuri methi , nigella seeds, coriander powder and red chili powder. You can also use leftover paneer bhurji or Paneer tikkas to make the stuffing.
How To Make
Preparation:
- Cut the paneer into bite sized pieces. Using a fork, roll them into achari masala and mix well.
- Roll out the thawed puff pastry sheet and cut it into 9 puff pastry squares.
- Spread the teaspoons of green chutney in the middle of each square.
- Place a spoonful of the paneer filling onto each pastry square. Add pinch more of achari masala on the top. Then add shredded cheese on top. Lift two opposite sides of puff pastry and pinch them together to make puff pastry pockets. You may want to insert a toothpick through both the ends to ensure it stays closed.
If you want to bake the paneer puffs in the oven
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- Place the filled pastries onto the prepared baking sheet and spray the tops with a little oil for a golden finish.
- Bake in the preheated oven for 15-20 minutes or until the pastries are puffed up and golden brown.
- Once baked, remove from the oven and sprinkle some chaat masala and chopped coriander leaves for a fresh burst of flavor.

If you want to air fry the paneer puffs
- Place the spiced paneer puffs on the air fryer basket. Spray the tops with a little oil for a golden finish.

- Once done, remove from the air fryer and sprinkle some chaat masala and chopped cilantro leaves on the top.

- 2 (17.3 oz packet) Puff Pastry Sheets Ready to bake, thawed per package instructions
- 1 cup Paneer cut into 18 bite size pieces
- ¼ cup Green Chutney
- ¼ cup Achari Masala
- 1 cup shredded cheese Mozzarella or Colby Jack preferred
- Oil Spray
- 1 Tablespoon Chat Masala optional, for garnish
- ¼ cup Cilantro Leaves optional, for garnish
