  • 1 sheet frozen puff pastry thawed
  • 2 cups desiccated coconut or use fresh coconut
  • ¾ cup sugar or jaggery ; adjust the sweetness
  • ½ teaspoon green cardamom coarsely ground
  • Small pinch Saffron strands
  • 1 Tablespoon melted butter or ghee for brushing
  • 1-2 teaspoons water for sealing

Instructions

Make the coconut filling.

  • Add the desiccated coconut to a dry pan and toast on medium-low heat for 1–2 minutes until lightly fragrant. Mix with sugar, cardamom powder, and a small pinch of saffron. Cook for another 3-5 minutes on very low heat stirring frequently. Remove from the heat and let it cool. Set aside.

Prepare the puff pastry.

  • Unroll the thawed puff pastry and cut it into 3 equal sections along the fold lines. Roll each section gently to make it slightly wider. Place 2–3 tablespoons of the coconut filling in the center, leaving some space around the edges.

Shape the gujiya bites.

  • Fold the pastry over the filling and press the edges firmly to seal. You can crimp the edges lightly with a fork for a decorative finish. Repeat with the remaining pastry. Place the filled pastry logs in the freezer for 15 minutes to firm up.

Air fry until golden.

  • Cut each chilled pastry log into 6–8 bite-sized pieces. Arrange them in a single layer in the air fryer basket, leaving space between each piece. Air fry at 350°F for 8–10 minutes, or until puffed and golden brown. Let them cool slightly before serving.

How to bake Gujiya Bites Puff Pastry Dessert in the oven

  • Preheat the oven to 400°F. Arrange the prepared gujiya bites on a parchment-lined baking sheet, leaving space between them. Brush lightly with milk or melted butter. Bake for 12–15 minutes, or until puffed and golden brown. Let them cool for a few minutes before serving.

Notes

My Tips for Perfect Puff Pastry Gujiya

Don't overfill them. This is probably the most important tip. Too much filling can make the pastry difficult to seal.
Keep the puff pastry cold. Warm pastry becomes sticky and is harder to shape.
Seal the edges well. Press firmly with a fork. This also gives the gujiya bites a pretty decorative edge.
Don't overcrowd the air fryer. Cook in batches if necessary. You want the hot air to move freely around each piece.
Watch the last few minutes. Puff pastry can go from golden to too dark surprisingly quickly.
Let them cool slightly. The coconut filling continues to set as the pastries cool.
