Ingredients
Mashed Spiced Chickpeas ( Chole): Use my favorite Indian Chickpea Curry recipe to make homestyle chole. You can make this well ahead of time. I like the mash the chole to make them into Refried Chole ( similar to Mexican dip)
Seasoned Potato : Mashed or petite cubed boiled potatoes seasoned with chaat masala add an earthy, savory element.
Onion-Tomato-Cilantro Salad : This fresh salad gives the dish a zesty crunch, balancing the spices with a burst of citrus. This is similar to the salsa layer in traditional Mexican 7-layer Dip.
Spiced Yogurt Layer: Cooling yogurt infused with mint and cumin adds creaminess, balancing the bold flavors. Use thick yogurt or hung curd and season it with roasted cumin seed powder and chopped mint leaves.
Chutney Layers : Chaat recipes are incomplete without adding tangy and spicy chutneys. Mint Cilantro Chutney adds bold spicy taste while Date Tamarind Chutney gives earthy sweetness.
Sev (Crispy Gram Noodles): Sev adds the perfect crunch, a signature texture of any chaat dish. I am using store bought thin nylon sev.
Pomegranate Seeds : These juicy, ruby-red seeds bring a burst of sweetness and color to the chaat. Don't skip it.
How to Make
Layer 1: Mash the Chole (Chickpeas)
Start by mashing the prepared chole lightly, keeping some texture for that delicious bite. Spread them on the bottom of your board or serving dish. This will form the base layer of your chaat board.
Layer 2: Prepare the Seasoned Potatoes
Mash the boiled potatoes and mix in the chaat masala, red chili powder, and salt. Spread this seasoned potato layer on top of the chickpeas to make the second layer.
Layer 3: Mix the Onion-Tomato-Cilantro Salad
In a bowl, mix finely chopped onion, tomato, cilantro, lemon juice, and salt. Spread this zesty salad over the potato layer for a fresh and tangy crunch. This will be 3rd layer of the chaat dip.
Layer 4: Make seasoned yogurt
Whisk the thick plain yogurt with roasted cumin powder, chopped mint leaves, and a pinch of black salt. This creamy, cooling yogurt layer will balance the spices perfectly.
Layer 5: Chutney Drizzle
Lightly drizzle both cilantro mint chutney and date tamarind chutney over the yogurt layer. This is personal preference so use as much as you like.
Layer 6: Top with Sev
Generously sprinkle the crunchy sev over the entire mixture layers. This crispy element is what makes chaat so irresistible!
Layer 7: Garnish with Pomegranate Seeds

I prefer to serve this 7-layer Indian Chaat Dip with store bought naan dippers. These bite sized naan dippers come in super handy and make it very filling heavy appetizer to get the party rolling.
You can also serve it with crispy papdis (fried dough wafers) or pita chips. The best part about this dish is that you can customize each bite to your liking—whether it's extra yogurt for creaminess or more sev for crunch!
I served it on a serving platter to make a chaat board. You can also layer it in Trifle Bowl for party arrangement. Individual serving cups are also great option to serve this dip.
