Crispy Masala Karela is my favorite way to make bitter melon. Thinly sliced karela is tossed with everyday Indian spices, crunchy chana dal, and a simple tadka. Then it goes into the air fryer. The result is crispy, savory, and packed with flavor.

This Air Fryer Karela Recipe uses very little oil. There is no deep frying. No complicated masala paste. If you are looking for an easy bitter gourd recipe, a healthy air fryer vegetable recipe, or a crispy Indian side dish, this masala karela is one to try.
Similar to Crispy Tindora, Potato masala, Baingan Bharta, Lauki Fry, Valor Papdi Subzi and Bhrvan Bhindi(stuffed okra) this crispy karela is a dry stir-fry. You typically pair it with gravy curry for a balanced meal.

The vegetable has a distinctive green, ridged skin and a naturally bitter taste. That bitterness is exactly why karela can be polarizing.
But when thinly sliced and cooked until crisp, the flavor changes. You get caramelized edges, roasted spices, and a wonderful contrast between the crisp outside and tender center.
Ingredients

Karela: Choose firm, fresh bitter gourds. Look for bright green karela without soft spots. Thin slices will give you the crispiest results.
Chana dal: This is the special ingredient in this recipe. It becomes toasted and crunchy in the air fryer. It also adds a pleasant nutty bite.
Oil: You only need a small amount. Use avocado oil, vegetable oil, or another neutral cooking oil. I prefer using oil spray since you only need a few mists.
Tadka spices: Cumin seeds and fennel seeds bring the familiar flavor of an Indian tempering. I also add sesame seeds.
Dry spices: Turmeric, red chili powder, and garam masala give the karela warmth, color, and taste.
Optional ingredients: To mellow the bitterness, you can add little sugar or sweetener. I prefer to use lemon juice, grated coconut and fresh cilantro for garnishing.
How To Make

1. Prep the karela:
Wash and thinly slice the karela. Remove the tough seeds and white pith if needed. Sprinkle with salt and let it sit for 20–30 minutes. Squeeze out excess moisture and pat dry. Soak chana dal for 20-30 minutes, then drain well.
2. Season:
Add karela and chana dal to a bowl. Toss with oil, cumin seeds, fennel seeds, turmeric, red chili powder, garam masala, salt, sesame seeds and sugar (if using). Mix well so everything is evenly coated.
3. Air fry:
Preheat the air fryer to 325°F. Arrange the karela and chana dal in a single layer. Air fry for 10-15 minutes, shaking the basket halfway, until the karela is browned and crispy. I spray little oil on top midway through air frying.
4. Garnish:
Drizzle some lemon juice on top. Serve it with freshly grated coconut and chopped cilantro leaves. Serve warm.

Pro Tips For Extra Crispy Karela
Slice it thin. Thin karela slices become much crispier than thick pieces.
Dry the karela well. Moisture is the enemy of crispiness.
Do not overcrowd the basket. Spread the slices out as much as possible.
Shake the basket. This helps the karela and chana dal brown evenly.
Watch the chana dal. It can brown faster than the karela. If your dal starts getting too dark, reduce the temperature slightly.
Cook at lower temperature: To prevent burning and avoid tough and woody texture, cook at 325°F for slightly longer (extra 2-5 minutes)
Serve immediately. Crispy karela is at its best when freshly cooked.
How To Serve Karela Fry
This crispy karela is a wonderful Indian side dish. Since this is a dry stir-fry, pair it with gravy based curry like Spinach Dal, Sprouts Curry , Aloo Vindaloo or Eggplant Curry.
As a everyday simple meal. you serve it with simple dal and rice. The crisp texture is especially good with soft, comforting dal. Finish it off with mattha- masala chaas for satisfying balanced meal.
You can also serve it with roti, chapati, paratha, Jeera Rice, Peas Pulao, Khichadi, along with Kadhi or Sambar. I also love adding it to an Indian thali.

Can You Make Karela Less Bitter?
Yes. Salting the sliced karela and letting it rest for 20 to 30 minutes is one common kitchen method. Squeezing out the excess liquid afterward can mellow the flavor.
Another important trick is balancing the bitterness with tangy, spicy, and roasted flavors.
That is why lemon juice or amchur, chili powder, toasted chana dal work so well together. Fennel seeds are naturally sweet, which add nice earthy sweetness.
I do not recommend trying to remove every bit of bitterness. A little bitterness gives karela its signature flavor.
Storage And Reheating
Crispy karela is best eaten fresh.
If you have leftovers, let them cool completely and store them in an airtight container in the refrigerator.
To bring back some of the crisp texture, reheat them in the air fryer for a few minutes at around 350°F. Avoid microwaving if you want the karela to stay crispy.
