Lauki Sabji, also known as Dudhi chi bhaji is an Indian bottle gourd curry. It is a traditional dish prepared by stir frying lauki with cumin, turmeric, and spices. This simple yet flavorsome Indian curry is everyday homestyle meal prepared for weeknight dinner and lunch. This step by step recipe makes best vegan and gluten-free lauki subzi.
Lauki, also known as calabash or bottle gourd or opo squash, is used in Indian cuisine in various ways. I am sharing my recipe that I make weekly for family dinners. This quick and easy dudhi chi bhaji or lauki sabji recipe is very versatile so you can adjust it to your taste.
Lauki ki Sabji boasts an impressive nutritional profile. Bottle gourd is rich in essential vitamins and minerals, including vitamin C, vitamin B, calcium, and iron. Moreover, it is low in calories and high in dietary fiber.
Ingredients
Lauki : You can buy lauki in most Indian and Asian grocery stores. Sometimes the lauki has a bitter taste. So make sure to taste the bottle gourd then first taste to ensure it’s not bitter. If it tastes bitter then simply discard it. Only use fresh and tender bright green and firm lauki for the best taste
Spices and Oil : I use cumin seeds, garam masala, turmeric powder, and Kashmiri red chili powder for spices. I love to use fresh green chili and fresh curry leaves in tadka which is warm oil tampering typically used in most Indian curry preparations. Fresh lemon juice and coriander leaves (cilantro) round up the flavors. Any cooking oil works.
How to Make Lauki Sabji on Stove Top
Prepare the Bottle Gourd: Peel the bottle gourd. Scoop out and remove the core and seeds. Cut it into small cubes. Rinse the pieces under running water and set aside.
Sauté : Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter. Add fresh curry leaves and finely chopped green chili (if using). Sauté for another minute.
Add Bottle Gourd : Add the cubed bottle gourd to the pan. Season with salt according to taste and stir everything together. Cover the pan with a lid and let the Lauki Sabji simmer on low heat for about 10 minutes, or until the bottle gourd is tender.
Add Spices: Add turmeric powder, garam masala, and red chili powder to the pan. Mix well to combine with the spice mixture.
Garnish and Serve: Once the bottle gourd is cooked through, drizzle fresh lemon juice and garnish the Lauki Sabji with fresh coriander leaves. Serve hot with roti or rice as a main dish or as a side dish alongside other Indian delicacies.
Serve hot Lauki Sabji with freshly made roti or steamed rice or Jeera Rice for a comforting and nutritious meal. Pair it with a side of yogurt and pickles for a balanced Indian dinner. For added freshness, garnish with a squeeze of lemon juice and chopped cilantro before serving.

- ½ teaspoon cumin seeds
- 1 green chili finely chopped (optional)
- 4-5 fresh curry leaves or 1 bay leaf
