Field beans or broad beans are the alternative names for Valor Papdi. It brings an earthy and nutty flavor to the dish similar to Gujrati Undhiyu Recipe. It is a mildly spicy and aromatic Gujrati Sabzi Recipe.
This subzi is my all time favorite especially in winter season. The combination of familiar vegetables and spices, cooked to perfection, evokes a sense of homeliness and satisfaction. It's a dish that brings warmth to the table. Whenever I crave simple homecooked meal, I make this tasty winter sabzi recipe.
Ingredients
Fresh Valore Papdi : In English, Valor Papdi is also known as field beans or broad beans, and in Hindi, it goes by the names val papdi, gujarati valor, and sem ki phalli. Most Indian grocery stores sell it fresh as well in frozen form.
Oil Tempering : Like any typical Indian shak / sabzi or bhaji , traditional tempering of mustard seeds or tadka is a quintessential to making this recipe. Season warm cooking oil with cumin and mustard seeds along with fresh curry leaves, turmeric powder, garam masala and red chilli powder. I also use goda-masala which is coconut based earthy spice mix.
Coconut : Freshly grated coconut adds subtle sweetness and balances the flavors. You can use frozen defrosted grated coconut or dry shredded coconut.
Other Ingredients : Fresh lemon juice adds refreshing citrcy flavor. Coriander leaves ( cilantro ) adds nice fresh flavors as a garnish. Optional ingredients to use include hing, green chilli paste, tomato, peanuts, sesame seeds and carom seeds (ajwain).
How To Make
Heat oil in a pan and add cumin seeds and mustard seeds and ( asafoetida and fresh curry leaves if using ) Once they splutter, add turmeric and sauté for 30 seconds. Add chopped valor papdi. Stir well.
Add water, cover the pan with the lid and let the Valor Papdi simmer on low heat for 5-7 minutes. It needs to get tender and soft. Open the lid.
Sprinkle red chili powder, goda masala, Garam masala or coriander powder, and salt. Add grated coconut. Stir and mix well to coat the vegetables with the spices.
Cover and let it cook for additional 3-4 minutes so that the flavors meld together. Turn off the heat.
Once the Valor Papdi is perfectly seasoned and cooked to perfection, garnish with fresh coriander leaves. Drizzle lemon juice over and mix well. Serve hot with roti or rice. Enjoy !

- The valor bean pods have fibrous string on both sides. Start by cleaning and trimming the Valor Papdi. Remove the strings on both sides and chop them into bite-sized pieces. Since it's a time consuming activity, I prefer to buy ready to use beans.
- You can use the same gujarati papdi nu shaak recipe with various other beans including french beans.
- You can use roasted besan ( gram flour or chickpea flour ) for added protein.
- Just like snow peas, you will be eating the pods of the beans. So choose green tender fresh papdi pods with soft small beans.
- This recipe is suitable for vegan and gluten free. I avoid using ginger garlic paste to make it Jain.

- 4 Cups val papdi flat green beans , papdi or field beans or valor or lima beans
- 1 tablespoon cooking oil
- ¼ teaspoon Cumin Seeds
