    Indian Cabbage Stir Fry | Patta Gobhi

    Indian fried cabbage also called Patta Gabhi is surprisingly flavorful, and easy to cook. This simple turmeric cabbage stir fry makes an excellent Indian vegetarian dinner recipe. And it is very budget friendly meal prep too.

    You will love this 20 minute meatless weeknight dinner. It’s one more of those “Simple ingredients BIG flavors” recipe from our kitchen.     I am including instructions to make Cabbage and Peas Stir Fry at home using stovetop method as well as electric pressure cooker like Instant Pot method.

    Indian Fried Cabbage

    Popularly called as Patta Gobhi Matar or Kobi chi bhaji, this Indian fried cabbage stir-fry is tasty and loaded with nutrients.

    It pairs well with rice, quinoa, roti or bread. You can just it as itself as a salad. Or use it as a filling for sandwich or wraps.

    Is Cabbage Good For You?

    Cabbage is one of those low carb, low calorie cruciferous vegetable that is Keto friendly. To make this recipe pure keto , skip adding peas.

    Being a cruciferous vegetable, cabbage is loaded with antioxidants and anti-inflammatory nutrients. We add in golden turmeric and this stir fry becomes Superfoods Stir-fry

    Cabbage is one of the vegetables that people either love or hate. If you aren’t a fan of cabbage, do give this recipe a chance. I have a strong feeling, you will start loving it too. (personal experience !)

    Serving Ideas

    This simple stir-fry is on a weekly dinner rotation in our kitchen. I like its versatile uses. Because this is one of those dishes that looks nice and fancy on a plate but in reality is a breeze to make.

    If I get bored of eating it with rotis, we add some chili garlic sauce, sprinkle some Chinese 5 spice and serve it over noodles for quick Chinese Cabbage Stir-fry.

    I also use the same recipe, instead of garam masala , add some Mexican taco seasoning and make delicious quesadillas for kid’s lunchbox.

    My mom used to make toasted wrap called Frankie and pack it for my school lunch.

    You can add potatoes to this recipe to make Patta Gobhi Aloo Matar.

    This preparation results in dry vegan entrée so I prefer to call it stir fry instead of curry. You can add more water and make it curry consistency if you wish.

    This Cabbage Stir Fry Recipe

    • can be made on the stove top or in the electric pressure cooker like Instant Pot
    • is vegan and gluten-free
    • gets done in less than 20 minutes from start to finish

    How To Cut Cabbage

    • Remove the tough outer leaves.
    • Using a long cutting knife, cut the cabbage in quarters over a stable cutting board.
    • Remove the white core from each quarter of the cabbage by holding the piece vertically, with the V-shaped core at the base. Slice off the core in one diagonal cut.
    • Slice or shred the cabbage. I prefer to use food processor’s grating disk for shredding the cabbage.

    Ingredients

    • Vegetables – Cabbage, Peas, green chili and onion
    • Oil Tampering / tadka – oil , cumin seeds, turmeric powder, garam masala and salt per taste. Traditional recipes also include asafetida ( hing ) and fresh curry leaves both of these are flavor enhancers. If you don’t have them easily available, simply skip it.  Also for WFPB, skip oil and use vegetable broth or water instead.
    • For garnish: lemon juice and chopped cilantro leaves.

    Kitchen Gadgets / Utensils to Make this Indian Cabbage recipe with ease

    • Instant Pot
    • Food Processor – with grating disk for shredding the cabbage.
    • Cast Iron Skillet to make it on stove top

    How to Make

    • Heat oil in a pan and add cumin Seeds. When the seeds start to crackle add asafetida ( if using). Fry for a few seconds.
    • Add green chili, onion and curry leaves. Sauté for 2 to 3 minutes until onions soften.
    • Add cabbage and green peas. Sauté well. Add turmeric powder, garam masala and salt. Stir to combined everything together.
    • Add 1-2 tablespoons of water and let it cook for 5 minutes with a lid on. Then stir the mixture, remove the lid and cook for additional 5 minutes stirring occasionally. Turn the heat off when cabbage feels wilted and softer.
    • Add lemon juice. Garnish with chopped cilantro leaves. Turmeric Cabbage stir fry is ready ! Enjoy !

    Cabbage and peas stir-fry with turmeric is popular Indian recipe. It is also called Patta Gobhi Matar. This 20 minute dinner recipe is gluten free, vegan and soy free and loaded with superfood nutrients.

    Ingredients
      

    • [1 tablespoon oil] Use water or broth for WFPB
    • [½ teaspoon cumin seeds]
    • [¼ teaspoon asafetida optional]
    • 1 green chili sliced
    • 1 medium onion chopped
    • 6-10 curry leaves or 1 Bay Leaf
    • [½ teaspoon Turmeric Powder]
    • [½ teaspoon Garam Masala]
    • 4 cups chopped cabbage – 1 small cabbage
    • ½ cup green peas I used frozen
    • 1 tablespoon lemon juice
    • [Salt per taste]
    • Chopped cilantro leaves for garnish

    Instructions
     

    Indian Cabbage Stir Fry in Instant Pot

    • Press the SAUTE button on the Instant Pot. Once it displays hot, add the oil and then add cumin seeds and let them sizzle. Add asafetida, green chili, onion and curry leaves. Curry leaves will sizzle. Sauté for 2 to 3 minutes until onions soften.
    • Add cabbage and green peas. Saute well. Add turmeric powder, garam masala and salt. Stir to combined everything together.
    • Then add 1-2 tablespoons water. And de-glaze the pot by scrapping the bottom. Make sure there is nothing stuck at the bottom of the pot. Cancel SAUTE.
    • Close the lid and move the Pressure valve to SEALING. Press the MANUAL or PRESSURE COOK button and select high pressure for 1 minutes.
    • When InstantPot beeps after its done cooking, Quick release the pressure by moving the valve to VENTING.
    • Open the lid and stir everything well. Add lemon juice. Garnish with chopped cilantro leaves. Cabbage stir fry is ready !
    • If there’s any excess water, you can press SAUTE and cook for extra 2 minutes until it becomes little dry.
    • If you want softer cabbage cook for 2-3 minutes on high pressure.
    • Cabbage releases a lot of water when pressure cooked so add very little water while pressure cooking.
    • ** Instead of pressure cooking, you can do this recipe entirely on SAUTE mode as well. In that case, skip the steps from close lid. Instead use glass lid and saute for 8-10 minutes on medium level stirring frequently. The stir fry comes out dryer and requires no water if you do it this way

    To make this recipe WFPB – No oil compliant , use vegetable broth instead of oil for sauteing.
