Roughly chopped red cabbage is coated with garlic and olive oil. It is then air fried to get crispy outer layer and warm meaty interior. It’s a wonderful mix of textures with delightful savory bites.

Chimichurri sauce is often slathered on grilled meat dishes. You can however, use it on variety of vegetable and pasta dishes. This zesty herb sauce brings heavenly depth to cabbage steaks.

The parsley and cilantro create a bright, fresh sauce with a touch of spicy heat from the red pepper flakes. Then there is zesty garlic and onions lacing the all-around deliciousness.

Do you use red cabbage in your regular meal prep? You must. I love to include this crimson purple vegetable in my routine diet.

A meal full of rainbow veggies is nourishing. Different colors of veggies have different nutrients profile. So when we eat multicolored fresh vegetables, you get immense depth of nutrients that helps your body nourish and heal.

The health benefits of red cabbage include prevention of premature aging as well as skin and eye care. It helps in weight loss and boosts immune system. It is also good for increasing bone density, improving heart health, and healing ulcers.

So, I love adding red cabbage in my daily meals besides using it in salads. One fine day, as I was deciding what to make for lunch, I decided to make it into steaks and air fry it.

My family loved the crispy steaks so much that they often request me to make this recipe. It’s quick, easy and doesn’t require much of preplanning and prep work.

We love bold flavors of sauces and spices. So, chimichurri is one of my favorites. I often have a fresh batch of sauce ready when I get my CSA produce box full of fresh veggies and herbs.

So, I decided to pair the red cabbage with herbaceous Chimichurri, and we thought OMG quality delicious meal was created. So much so that I keep repeating it often on weekly menu.

HOW TO MAKE CHIMICHURRI SAUCE

We roughly blend mix of parsley, cilantro with garlic and red onion. Mix it with salt, olive oil and red pepper flakes. That awesome mix becomes easiest Chimichurri sauce.

You can use it as a topping on all sorts of grilled dishes. You can also use it in eggs, pasta, sandwiches or burgers. Or just lick it right off the spoon because it’s that tasty.

INGREDIENTS 

To make Cabbage Steaks with Chimichurri Sauce you need,

A medium head of red cabbage – roughly chop into 1” pieces and loosen them by hand.

oil, salt and pepper – I use Avocado oil spray. You can use any cooking oil.

Chimichurri Sauce – fresh bunch parsley leaves, cilantro leaves, garlic, small red onion, red pepper flakes, olive oil, cumin powder and lime juice.

INSTRUCTIONS TO MAKE CABBAGE STEAKS WITH CHIMICHURRI SAUCE

Coarsely chop red cabbage into 1″ pieces. Using your fingers, separate the stack of chunks into smaller sections. Discard tough white portion in the middle.

Generously spray the cabbage with oil mist. Add salt and pepper and toss to coat.

Arrange the pieces on the air-fryer basket in single layer. Don’t overcrowd them.

Use 375°F BAKE / AIRFRY setting and set timer for 12 minutes. Check intermittently so the pieces don’t burn.

After 12 minutes are done, switch it to AIRFRY mode and let it air-fryer for another 5 minutes. This helps get outer leaves nicely charred and crispy.

Remove from the air-fryer. Drizzle chimichurri sauce over cooked cabbage. Toss well so the sauce coats the steaks well.

Serve warm and enjoy.

Notes

HOW TO CUT CABBAGE STEAKS?

1. Pull outer leaf off cabbage and discard.
2. Cut the bottom (the root) off of the cabbage and set it sitting up so that the flat end is on the cutting board.
3. Cut cabbage from top to bottom (bottom being the root) into 2 big pieces.
4. Slit it in V shape at the base and discard the tough white steam part. Now putit upside down and cut vertically into 1" slices.
5. Then go diagonally about 1" distance and cut along. Loosen the pieces with fingers.
