Zucchini : Zucchini, Courgette or baby marrow is easily available squash vegetable. No need to peel the zucchini. Just cut into bite size pieces and use it for this recipe. You can also use any summer squash. You can also cut it into slice or sticks.
Salt and Seasoning : I am using all purpose seasoning mix. You can use other simple seasonings like Italian seasoning, garlic powder, onion powder, paprika or cayenne. Lemon juice drizzled on top adds nice citrus zest.
Oil : Any cooking oil works but I prefer extra virgin olive oil. You can also use cooking spray or oil mist to further cut down on calories. For WFPB cooking, simply skip using oil.
How to Air Fry Zucchini
- Cut zucchini into bite size chunks about ¾ inches chunks – no need to peel them.
- Add it in mixing bowl. Sprinkle some salt and let it sit for few minutes. It will release some water, tap it dry with paper towel.
- Add seasoning and oil. Mix well.
- Place the zucchini in the Air Fryer basket and cook at 400 degree Fahrenheit for 10 minutes or until crisp.
- Serve with desired garnishes. Enjoy !
Pro Tip: As with most veggies, a single thin layer gives the best results. If you’d like to cook more, cook in batches, and then put it all back into the air fryer to heat through at the end.

Since zucchini is a high water content vegetable so I do not recommend freezing it. It will get soggy and mushy when it freezes and will not become crispy when reheated.
How To Avoid Soggy Roasted Zucchini
Do not cut the zucchini too thin and small.
The key to roasting vegetables is proper heated air circulation. So you need to give enough space between the pieces.
Do not crowd the veggies too closely while roasting. The air won’t circulate properly and they’ll steam and release water instead of becoming crispy. Work in batches if needed.
Salt The Zucchini : Place a single layer of cut zucchini on baking tray and sprinkle them with salt; wait five minutes so that the salt extracts the moisture, then tap them dry using a paper towel.

Air Fryer Zucchini No Breading
Ingredients
- 1 pound zucchini about 2 medium
- 1 Tablespoon Olive Oil or Oil Spray
- 1 teaspoon all purpose seasoning
- Salt to taste
Optional Garnishes
- 2 Tablespoon grated parmesan cheese use plant based version for vegan
- 1 Tablespoon herbs – dried or fresh – rosemary basil, parsley, thyme, oregano or cilantro
- 1 Tablespoon lemon juice
- ¼ teaspoon ground black pepper red chili flakes
Instructions
Air Fryer Instructions
- Cut zucchini into ¾" chunks.
- Sprinkle some salt and let it sit for few minutes. It will release some water, tap it dry with paper towel.
- Add seasoning and oil. Mix well.
- Place zucchini into the air fryer basket in a single layer.
- Set temperature to 400 degree Fahrenheit and cook 7-10 minutes or until zucchini reaches desired texture.
- Open the air fryer half way through, shake the basket and continue to cook further.
- Once roasted, serve with desired garnishes. Enjoy !
