    You will love this Mediterranean salad with beautiful natural colors and incredible flavors. Similar to Italian Summer Pasta Salad , Beet Arugula Salad and Chickpea Veggie Salad, this is our family favorite salad recipe.

    Peach Tomato Mozzarella Salad

    This Caprese Salad is on the regular rotation during summer season when tomatoes and peaches are at their peak in flavor and texture. Fresh Mozzarella makes it incredibly satisfying with creamy texture.

    It’s a sweet and savory dish that’s easy to put together. The salad is also vegetarian, gluten free, and low carb Keto.

    This pretty salad is often featured in food magazines and seen on menus of fancy restaurants. You be the gourmet chef and make it at home. Stardom for all my readers!

    Ingredients

    Summer Caprese Salad is a layered salad of tomatoes, cheese and herbs. Exact measurements are listed in the recipe card below.

    • Red ripe tomatoes
    • Juicy ripe peaches or nectarines
    • Fresh mozzarella cheese
    • Fresh basil leaves
    • Extra virgin olive oil
    • Balsamic Vinegar Glaze
    • Salt and fresh ground black pepper

    Different Caprese Options

    The classic Caprese salad can be used in various different dishes. You can add cooked pasta to make it Caprese Pasta.

    If you use cherry tomatoes and arrange the layers in skewers, it becomes incredibly gourmet Caprese Skewers Appetizer.

    Use a good ciabatta or Italian bread along with this salad mix to make a Caprese Sandwich.

    Mix it with grain of your choice like quinoa or rice to make Caprese Buddha Bowl.

    With a good pizza base, this mix can be turned into Caprese Pizza. Don’t you just love all these endless possibilities..

    How To Make

    Start by layering slices of tomatoes on a serving platter. Then tuck sliced peaches between the two tomato slices.

    Now tuck slices of Mozzarella cheese between each tomato and peach slices. Then tuck whole basil leaves between the cheese and tomato or peach layer. Arrange the slices so you can see every layer.

    Alternating the tomato, peach, cheese and basil slices creates beautiful visual. Sprinkle salt and pepper. Drizzle with extra virgin olive oil. Use a spoon and drizzle balsamic glaze.  Serve immediately.  Bon Appetit

    What is Balsamic Glaze

    I highly recommend you try making simple Balsamic glaze at home. It’s a simple technique of heating balsamic vinegar to thicker consistency.

    It is also called a balsamic reduction. When you heat up balsamic vinegar, it reduces from watery texture to sauce type thick texture. It brings out immense flavor. You want it thickened to a chocolate syrup consistency.

    It turns to very dark in color and has deep concentrated flavor. It thickens more as it cools down. Using a spoon you can drizzle it over the salad.

    Storage

    This salad tastes the best when served fresh. Do not prepare it too early before serving. Also do not store prepared salad for too long.

    What can you serve with Peach Tomato Caprese?

    I love to to pair this salad with Air Fryer Garlic Toast for scrumptious lunch. You can also serve it with Avocado Toast for satisfying breakfast / brunch. For light and refreshing meal full of summer vibes, pair it with Zucchini Fritters or Italian Zucchini Noodles.

    For Pasta / Salad combination serve it with Penne Pesto Primavera, Penne Rosa or Lemon Basil Pasta. A light Asparagus Broccoli Soup or Carrot Ginger Soup also works.

    Fresh Mozzarella cheese is a classic to this salad. A close second option would be burrata which is creamy and mild in flavor.

    How To Make Balsamic Glaze At home

    Pour 1 cup balsamic vinegar into a saucepan and add 1 Tablespoon sugar or sugar substitute.

    Bring to a low boil, then reduce heat to keep at a simmer for 12-15 minutes. Stir occasionally until reduced by half and lightly coats the back of a spoon. It will thicken more as it cools.
