    Egg salad sandwich is my favorite food to order in restaurants. It is great vegetarian no-meat sandwich. Old world classic Katz Deli in NYC serves unbelievably delicious creamy egg salad sandwich that is so huge and so lusciously creamy.

    When I realized it was so easy to make this salad at home, I started to make it home too. I love the fact that it only needs 5 basic ingredients and there’s absolutely zero chance of messing up. Even kids can make it on their own.

    This sandwich is also very budget friendly and inexpensive. You don’t have to go on scavenger hunt to find the ingredients either.

    This classic egg salad can be served in so many different ways. It is a well liked salad on sandwiches that tastes simply amazing!

    This make ahead egg recipe is perfect for school and office lunches, parties and picnics. Try it for brunch, lunch or even dinner.

    You can serve this popular side for gatherings, potlucks and summer barbecue gatherings. It also is perfect for holiday meal planning especially for Easter.

    My favorite is served on a big dinner roll or on a croissant , it is so satisfying and filling.

    Pair it with simple salads like Quinoa Tabbouleh or Curry Lentil Salad for classic salad-sandwich combination. It also goes really well with Creamy Tomato Soup or Creamy Mushroom Soup for nourishing soup-salad meals.

    On it’s own, you can serve it along with sides like Crispy Kale Chips, Sweet Potato Wedges, Crispy Fingerling Potatoes or Zucchini Fries.

    Pro Tips to Make Best Egg Salad

    1. Use the freshest ingredients especially the eggs. That makes huge difference in the taste.
    2. Make sure that your eggs have cooled completely before preparing the salad.
    3. Cut the celery and green onion into fine small pieces and cut the cooked eggs little bigger.
    4. You can make hard boiled eggs ahead and refrigerate until ready to use in the salad.
    5. Serve it on lettuce to make a healthy -low carb and grain free sandwich.

    Mayonnaise, Dijon Mustard, celery and green onion are rest of the ingredients. Salt and ground black pepper round up the flavors of this classic egg salad.

    Variations

    This is one of those simple ingredients with a big flavor recipe. You can add several different ingredients to make it gourmet.

    • Kick up the seasoning with a dash of sriracha, dill pickle, vinegar, lemon juice or creole spice mix.
    • Add extra vegetables like cucumbers, avocado, carrots, grape tomatoes, colorful sweet peppers or cooked green beans.
    • Different proteins like shrimps, chicken, chickpeas or bacon can be added as well.
    • To lighten up the calories, use thick Greek yogurt or sour cream instead of mayonnaise.
    • Instead of green onions, you can use red onion.

    Egg Salad with Instant Pot Egg Loaf

    Hard boiled eggs are star ingredient in any egg salad. If you want to save on efforts of boiling and peeling a whole lot of eggs, you GOT TO try the Instant Pot egg loaf.

    With the electric pressure cooker like Instant Pot, you can cook large number of eggs at once, and not have to peel them! You can just chop up the an egg “Loaf” when it is done cooking.

    Ever since I saw this egg loaf recipe on Food Network, I have never cooked hard boiled eggs any other way to make this salad. The efforts it saves on boiling water, draining, ice-bath and peeling lot of eggs are just priceless.

    How To Make Instant Pot Egg Loaf

    1. Using a cooking oil spray, lightly coat a round dish that fits in your Instant Pot.
    2. Crack the eggs into the dish.
    3. Place a trivet in the bottom of the Instant Pot and add 1 cup of water to the pot.
    4. Place the dish of eggs on the trivet and close the lid.
    5. Press MANUAL or PRESSURE COOK and choose 6 minutes.
    6. Once Instant Pot finishes cooking and goes to keep warm timer, wait for 5 minutes and then release the leftover pressure manually.
    7. Remove the egg dish from the pot. Using the back of the knife, loosen the edges and slide the egg loaf onto a large cutting board.

    How to Make Keto Egg Salad

    I a large sauce pan, bring cold water and eggs to boil. Turn off the heat, cover and let it sit for 10 minutes. 

    Then run them under cold water and remove the peel. Let them cool down completely then chop them into bite size pieces.

    In a large salad bowl, combine chopped eggs, mayo, Dijon mustard, celery, green onions, salt, and pepper.

    Gently mix everything together. Refrigerate until ready to serve.

    • 8 hard-boiled eggs
    • ¼ cup celery finely chopped
