    Unlike plain scrambled eggs, egg bhurji has layers of flavor. The onions become lightly caramelized. Tomatoes add a little tang. Turmeric gives the eggs their beautiful golden color. It is a simple everyday dish, but it never tastes boring.

    For the spices, you’ll need cumin seeds, turmeric powder, red chili powder, coriander powder, garam masala, and salt. You can adjust the green chilies and red chili powder to make the Egg Bhurji as mild or spicy as you like.

    1. Whisk the eggs.
    Crack the eggs into a bowl. Add a pinch of salt and whisk until well combined. Set aside.

    There are so many ways to serve this recipe.

    For breakfast, I love it with toasted bread or buttered pav. Serve it with Air fryer Breakfast Potatoes and Savory Dosa Waffles for a cafe style Indian Breakfast. Air Fryer Custard Toast, Sweet Potato Wedges or Garlic Toast also make excellent sides.

    For a more traditional Indian meal, serve it with roti, chapati, paratha, naan or pav. You can also spoon the egg bhurji into a tortilla or roti and make a quick egg wrap.
