    Bread Upma Recipe is one of the easiest ways to turn a few slices of bread into a delicious Indian breakfast. It is savory, lightly spicy, tangy, and packed with flavor. This recipe is sometimes called Masala Bread or Masala Bread Upma.

    Traditional upma is usually made with rava or semolina. Bread upma takes a different approach. Instead of rava, cubed bread absorbs the flavorful masala.

    The result is soft, slightly crisp, and wonderfully savory. It is a practical recipe for busy mornings. You can make it in about 20 minutes.

    I especially love this recipe when I have a few slices of bread left in the refrigerator. Instead of making the same old toast, turn them into something completely different.

    Onion and Green Chili

    Onion creates a sweet, savory base. You can also add tomato for moisture and a little tang. You can reduce the green chili if you prefer a milder breakfast.

    Spices

    You only need a few spices. Turmeric gives the bread a beautiful golden color. Red chili powder adds heat. A little garam masala and hing gives the dish a deeper flavor.

    Tempering

    Oil, Mustard seeds, cumin seeds, and curry leaves create the classic Indian flavor. You can also add peanuts for crunch.

    How to Make Bread Upma

    1. Cut the bread

    Cut the bread slices into small cubes. If your bread is very fresh and soft, let the cubes sit uncovered for a few minutes. This helps them firm up slightly.

    For an even better texture, lightly toast the bread pieces in a pan with a little oil. Set them aside.

    2. Make the tempering

    Heat oil in a large skillet or kadai. Add mustard seeds and let them crackle. Add cumin seeds, curry leaves, and chopped green chili and a little chopped ginger. ( optional) Cook for about 30 seconds.

    3. Cook the onions

    Add chopped onion. Cook until the onion becomes soft and translucent. Add tomatoes (if using) and sauté for 2-3 minutes.

    4. Add the bread

    Add the toasted bread pieces to the skillet. Gently toss everything together. Do not stir too aggressively. The bread can break apart. If the mixture looks dry, sprinkle in a tablespoon or two of water.

    Cover for about one minute. The bread will absorb the masala without becoming overly soggy.

    5. Finish with lemon and cilantro

    Turn off the heat. Add fresh lemon or lime juice and chopped cilantro. Toss gently. Taste and adjust the salt, lemon juice, or chili powder. Serve immediately.

    Tips for the Best Bread Upma

    Use day-old bread. Fresh bread can become soft quickly. Slightly stale bread gives you a better texture.

    Toast the bread first. This is my favorite trick. Lightly toasted bread stays intact and gives the finished dish more texture.

    Don't add too much water. Bread absorbs liquid very quickly. Start with a small amount.

    Cut everything small. Small pieces of vegetables distribute evenly through the bread.

    Add lemon or lime at the end. Fresh lemon/ lime juice brightens all the flavors.

    Don't overcook. Once the bread has absorbed the masala, stop cooking.

    Variations for Masala Bread

    • This masala bread recipe is easy to change depending on what you have in your refrigerator.
    • For a vegetable bread upma, add peas, carrots, corn, bell pepper, or finely chopped beans.
    • For extra crunch, add roasted peanuts or cashews.

    • 4 cups bread pieces
    • 2 Tablespoon cooking oil
    • ½ teaspoon cumin seeds
    • 1 teaspoon finely chopped ginger
    • 2 finely chopped green chilies

    • ½ teaspoon turmeric powder

    • ¼ cup roasted peanuts
    • 2 teaspoon lemon juice or lime juice

    Stove Top Instructions to make Bread Upma

    • Cut up bread into small bite size pieces.
    • Heat the oil in a sauté pan and add cumin and mustard seeds. When the seeds change the color to brown, add the curry leaves, asafoetida, ginger, green chilies, onion and peanuts. Sauté on a medium heat for 1 to 2 minutes.
    • Add the tomatoes, turmeric powder, chili powder, salt, and 2 Tablespoons water. Mix well and cook on a medium heat for 2 to 3 minutes while stirring frequently.
    • Add the bread, mix well so spice mixture coats the bread pieces. Cook on a medium heat for 2 minute, while stirring frequently. Turn the heat off. Add the cilantro and lemon juice and mix well. Serve hot. Enjoy !!

    How to make bread upma in Instant Pot

    • Turn on the Instant Pot on SAUTE mode. Once it feels warm, add oil and cumin and Mustard seeds. Once they change color, add the curry leaves, asafoetida, ginger, green chilies, onion and peanuts. Sauté for 1 to 2 minutes.
    • Add the tomatoes, turmeric powder, chili powder, salt, and ¼ cup water. Mix well. Let it cook for 2 to 3 minutes while stirring frequently.
    • Add the bread, mix well so the mixture coats well. Cover with the glass lid and cook for 2 minutes.
    • Cancel Sauté. Add the cilantro and lemon juice and mix well. Serve hot. Enjoy !!

    Notes

    If you do not have curry leaves and asafoetida powder handy, simply skip it. These two items are typically used as flavor enhancers in Indian cooking.
