I am combining two of my favorite recipes of Easy Italian Bruschetta and Whipped Cottage Cheese to make these Crostini. The textures and flavors, and the crispy bread enhances everything just so perfectly. It also is similar to Pan Con Tomate.

How to Make
Prepare Crostini : Preheat your oven to 375°F (190°C). Slice the baguette or ciabatta into ½-inch thick slices. Place the slices on a baking sheet in a single layer. Brush each bread slice with olive oil on both sides. This will give the crostini a golden and crispy texture.
Place the baking sheet in the preheated oven and bake for about 10-12 minutes or until the bread slices are toasted and lightly browned. Keep an eye on them to avoid burning.
Prepare the cottage cheese dip : In a food processor bowl, combine the cottage cheese, lemon juice, minced garlic and Italian Seasoning. Blend it to smooth cream like fluffy mixture.
Prepare Bruschetta : Combine diced tomatoes, chopped basil leaves, a pinch of garlic powder, salt, and pepper. Mix well.
Arrange the Dish : Once the crostini are ready, remove them from the oven and let them cool slightly. Take a crostini and spread a generous amount of the cottage cheese dip on top. Then spoon bruschetta mixture on top. Repeat with the remaining crostini.
If desired, drizzle a small amount of balsamic glaze over the assembled crostini for added flavor and visual appeal.
Arrange the Bruschetta Crostini with Cottage Cheese Dip on a serving platter and garnish with additional fresh basil leaves, if desired. Serve the crostini immediately and enjoy!
