- 1 Baguette Sourdough, French or Italian
- 1 Tablespoon Olive oil
- ½ Cup Cottage cheese
- 1-2 Cloves Garlic minced
- ⅛ teaspoon Italian Seasoning
- 1 Tablespoon Lemon Juice
- 2 Tomatoes diced
- ¼ cup Fresh basil leaves chopped
- Salt and pepper to taste
- Optional: balsamic glaze for drizzling
To Prepare Crostini
Preheat your oven to 375°F (190°C). Slice the baguette or ciabatta into ½-inch thick slices. Place the slices on a baking sheet in a single layer. Brush each bread slice with olive oil on both sides. This will give the crostini a golden and crispy texture.
Place the baking sheet in the preheated oven and bake for about 10-12 minutes or until the bread slices are toasted and lightly browned. Keep an eye on them to avoid burning.
Prepare the cottage cheese dip :
In a food processor bowl, combine the cottage cheese, lemon juice, minced garlic and Italian Seasoning. Blend it to smooth cream like fluffy mixture.
Prepare Bruschetta :
Combine diced tomatoes, chopped basil leaves, a pinch of Italian Seasoning, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
Arrange the Dish :
Once the crostini are ready, remove them from the oven and let them cool slightly. Take a crostini and spread a generous amount of the cottage cheese dip on top. Then spoon bruschetta mixture on top. Repeat with the remaining crostini.
If desired, drizzle a small amount of balsamic glaze and additional olive oil over the assembled crostini for added flavor and visual appeal.
