This air fryer cabbage steaks recipe is not only hearty and satisfying but also extremely easy to make. The whole family can enjoy these as a healthy dinner.

    Chimichurri sauce is often slathered on grilled meat dishes. You can however, use it on variety of vegetable and pasta dishes. This zesty herb sauce brings heavenly depth to cabbage steaks.

    The parsley and cilantro create a bright, fresh sauce with a touch of spicy heat from the red pepper flakes. Then there is zesty garlic and onions lacing the all-around deliciousness.

    These Cabbage Steaks with Chimichurri Sauce recipe come together in 30 minutes and can double as a main dish meal or side dish.

    What to eat with Air Fryer Cabbage Recipe?

    Pair it with Cilantro Lime Brown Rice or Turmeric Lemon Rice for a delish dinner. For lighter options, Tex Mex Quinoa or Superfoods Curried Quinoa will work beautifully.

    Vegetarian Steaks

    My family loved the crispy steaks so much that they often request me to make this recipe. It’s quick, easy and doesn’t require much of pre-planning and prep work.

    Cabbage is a cheap, easy way to score a healthy meal. It also takes on a new, pleasing texture when cooked.

    We love bold flavors of sauces and spices. So, chimichurri is one of my favorites. I often have a fresh batch of sauce ready when I get my CSA produce box full of fresh veggies and herbs.

    So, I decided to pair the cabbage with herbaceous Chimichurri, and we thought OMG quality delicious meal was created. So much so that I keep repeating it often on weekly menu.

    How to Make Chimichurri Sauce?

    We roughly blend mix of parsley, cilantro with garlic and red onion. Mix it with salt, olive oil and red pepper flakes. This recipe makes the awesome and easiest Cilantro Chimichurri Sauce.

    You can use it as a topping on all sorts of grilled dishes. You can also use it in eggs, pasta, sandwiches or burgers. Or just lick it right off the spoon because it’s that tasty.

    Ingredients

    To make Roasted Cabbage Steaks you need,

    A medium head of cabbage – roughly chop into ¾ inch steaks leaving the steam intact.

    Oil or Butter – I prefer to use Avocado Oil for it’s neutral flavors. You can also use butter for classic buttery flavors. Use plant based to make it vegan and dairy free.

    Garlic Powder, Onion Powder and Smoked Paprika – Simple seasoning but makes these vegetarian steaks pop in flavor. Chili powder also works.

    Salt and black pepper

    Optional Toppings: Chimichurri Sauce – I highly recommend this sauce for grilled meats and veggies. It accentuates the grilled flavors further. You can also use lemon wedges and fresh herbs like parsley or chives for toppings.

    How to Make Air Fryer Cabbage Steaks?

    • Pour a ¼ cup of water under the basket or drip tray. Then preheat the air fryer at 360 degree Fahrenheit. ( about 3 minutes)
    • Put cabbage steaks on the air fryer basket. Brush with butter or olive oil, then rub the seasoning on top. Put the basket in the air fryer.
    • Set the air fryer at 360 degree Fahrenheit for 10 minutes.  Halfway through,  flip the steaks upside down,  brush the top side with oil and seasoning and cook further.
    • Cabbage steaks should be well done in 10 minutes.  You can cook them 2 more minutes if you want them a little more toasted.
    • Serve with Chimichurri sauce, lemon juice or any other sauce of your choice. Enjoy !

    How to Cut Cabbage Steaks

    • Remove the two outermost leaves of the cabbage head. Also tear off any dark and  loose leaves.
    • Put it sideways on the cutting board. Using a sharp knife, cut off the bottom which is the tough root part of the cabbage. This should flatten the base.
    • Cut the cabbage head from top to bottom, making roughly ¾  thick slices. I prefer to cut one side and work my way around to the other side. You can also cut it in the middle and then cut one more thick portion to make 4 steaks.

    Storage Tips

    Store –  Place leftover cabbage steaks in an airtight storage container in the refrigerator for up to 4 days.

    Reheat – Reheat the steaks in the air fryer or oven at 350 degrees F for about 4 minutes. You can also microwave them for one minute. 

    Freeze – If you must, cabbage steaks can be frozen in an airtight freezer-safe storage container for up to 3 months. However the texture will significantly change when you thaw it.

    Pro tips

    • These cabbage wedges are cooked by steaming and air frying. Adding water under the basket helps make them softer inside while they crisp up and caramelize on the top.
    • I highly recommend using this method for cooking tough vegetables. It brings out tenderness without making them too dry and hard.
    • As always,  don’t overcrowd the air-fryer basket with steaks. You need hot air to circulate well so all the steaks cook well. So cook in multiple batches if needed.
    • Don’t cut cabbage too thin or too thick. ¾″ cabbage slices work well. Keep the stem intact while cutting. So the pieces hold together.
    • Do not forget to season and roast both sides of the cabbage steaks. SO halfway through cooking, flip them upside down, season and brush more oil and continue to cook further.

    Variations

    Instead of chimichurri sauce, you can make these Asian Cabbage by using tamari, soy sauce or coconut amino. Old bay seasoning also works.

    Balsamic vinegar glaze also tastes amazing on cabbage. You can sprinkle some parmesan cheese or nutritional yeast on top. We also love it on Air Fryer Brussels Sprouts.

    Roasted nuts like walnuts or pecans, panko breadcrumbs make great toppings too.
