Recipe Inspiration
I get nostalgic every time I think of these masala toast sandwiches. There are numerous happy memories associated with it.
During college days, my friends and I used to sit around for hours chatting and laughing and eating Bombay Sandwich with the side of cutting chai. Those fun filled conversations still linger in my mind as I jot down this recipe.
My Grandpa was very fond of these sandwiches too. Every summer break, when we visited, we used to have designated sandwich days. With Aam Panna , Saffron and Rose Lemonade and Lemon Rice on the side, it used to meal to look forward to.
All my cousins would gather around the kitchen counter. Then we used to form an assembly line of sandwich making. Those golden days were truly magical.
This satisfying and delicious recipe is super easy to make at home. This Indian version of western sandwich can be easily modified to your taste and preference.

Toast Sandwich Ingredients
- Sliced bread : you can use white, wheat, multigrain or gluten free bread.
- Green Chutney : made with cilantro, tomato, garlic, mint, ginger, green chilies, lemon juice and cumin.
- Cooked Veggies: Boil, peel, and thinly slice potatoes.
- Raw veggies: Thinly slice raw cucumbers, tomatoes, and onions.
- Sandwich Masala : You can buy it in the Indian grocery stores or make your own at home. I am including the details below if you want to make it at home.
- Butter: Both salted or unsalted butter works. You can skip this if you want to make this vegan. Or you can also use plant based vegan butter instead.
How to Make
- Take two bread slices. Using a knife, spread butter on one side of each slice of bread. Then evenly spread green chutney over them.
- Then layer the veggies on one slice. Start off by cucumber, potatoes and tomato slices.
- Sprinkle some sandwich masala on top. Add another layer of cucumber slices.
- Sprinkle sandwich masala and salt.
- Use another butter and chutney covered bread slice. Put it face down so to close the layered sandwich.
- Place the prepared sandwich in a Panini maker or a sandwich toaster and grill it. The outer layer should get golden brown and toasty.
- Once you get the grill marks on the bread, take it out using the tongs or slotted spoon.
- Cut diagonally into 2 pieces and serve with some chutney and ketchup on the side.

- This is pre-prep and assemble recipe. Cut all your veggies, melt the butter so it’s spreadable and have your grill ready.
- If you are making multiple sandwiches, setting up the assembly line of ingredients helps with quick and easy preparation.
- Traditional recipes were made using white sandwich bread. But to make it wholesome, feel free to use any multigrain or whole wheat bread.
- Use chaat masala if Sandwich masala is not available. You can switch it up with other spices of your choice too.
- You can also enjoy this sandwich without grilling it. Even the cold sandwich tastes great.
- These sandwiches taste best when freshly made. So prepare and serve / eat them immediately.
- Since cucumber and tomatoes start to release water, they get soggy relatively quickly. So don’t try to pre-make them.

Variations and Substitutes
- Vegetables : You can use different vegetables like red bell pepper ( capsicum) or zucchini besides just the cucumber, tomato and potatoes
- Potatoes : This recipe can be made using leftover Mashed potatoes as well. Spice it p to make potato masala and use it as a stuffing.
- Cheese : A layer of cheese is excellent addition.
How To Make Homemade Sandwich Masala
It is easy to make sandwich seasoning or masala at home. Use these ingredients
- ¼ cup cumin seeds
- 1 Tablespoon Fennel Seeds
- 1 Tablespoon Black Pepper
- 1 teaspoon Dry Mango Powder (amchur)
- 1 teaspoon Red Chili Powder (adjust per spice tolerance)
- 1 teaspoon Cinnamon powder
- Salt Per Taste
Lightly dry roast cumin seeds, fennel seeds and black pepper. Let it cool down completely. Using a dry grinder, grind all the ingredients to smooth powder.
Storage and Re-heating
Toast sandwiches taste their best when you serve them freshly made. If you must keep them for longer duration, let them cool down completely first. Then wrap each sandwich in aluminum foil or plastic wrap. You can keep it in the refrigerator for 1 day.
To reheat, simply put it in toaster oven until well heated. You can also reheat these sandwiches on the stove top griddle.
Serving Suggestions
This toast sandwich recipe is wholesome and filling. You can simply devour it by itself with a side of chutney or tomato ketchup. If you want to serve it with sides, here are few suggestions.

- 2 tablespoon Sandwich masala or chat masala
- Salt to taste
