What are the Ingredients of Instant Pot Vegetable Tortilla Soup?

The Vegetarian Tortilla Soup mix includes some fresh cut veggies like onion and minced garlic. I like to add a bag of frozen cut vegetable blend of cauliflower, broccoli and carrots.
Feel free to choose which ever vegetables you like. No hard and fast rule. We add a can of black beans and corn add in all the tex-mex feel to this yummy soup.
We make a soup base with a can of crushed tomatoes or tomato sauce. I prefer to use fire roasted tomatoes for added sweet and smoky flavors. I also add low sodium vegetable broth for added depth of flavor but water works too.

What Toppings Are Best to Make Delicious Tortilla Soup?

Topping or garnishes is where all the fun is for this hearty yummy soup. For me crushed tortilla chips are the must ! I also love variety of other toppings listed below. Choose one, choose two or all !!
  • chopped red onions
  • salsa
  • sliced avocado or guacamole
  • fresh chopped cilantro
  • jalapeño bites
  • Lemon / lime wedges
  • Sour Cream
  • Cotija cheese or Monterey Jack Cheese or any tex-mex style cheese 

How to Make Vegetarian Tortilla Soup in Instant Pot?

Making Vegetarian Tortilla Soup in Instantpot is super easy. Once you have chopped all your veggies, all you have to do is add everything into Instantpot.

This includes chopped veggies, corn, black beans, broth, crushed tomatoes or tomato sauce, and all the spices. Stir everything well. Close the Lid.

Set the Instantpot to Manual to high pressure for 5 minutes. Set it and forget about it till it beeps !! And be ready for Voila moment !!

Allow NPR. natural pressure release. Squeeze juice of half of the lemon and stir well. Your soup is now ready!

Add all your favorite toppings, or simply put some crushed tortilla chips into the soup for serving! Enjoy!

* For a thicker soup, feel free to add some corn tortilla chips (crumbled into pieces) to the soup while cooking. All those leftover tortilla chips at the bottom of the bag can be put to good use here!

Healthy Vegetarian Tortilla Soup - Instant Pot

Total Time: 30 minutes

This Vegetarian Tortilla Soup is an awesome one pot healthy meal-full of veggies, protein with touch of spicy nourishment! Easy Instant pot recipe is gluten free and vegan.


  • 1 cup diced onion
  • 2-3 cloves garlic, minced
  • 2 cups of vegetables of your choice, I used carrots, cauliflower and broccoli
  • 1 carton or 2.5 cups Low sodium vegetable broth
  • 1 can tomato sauce or crushed tomatoes
  • 1 can black beans, drained + rinsed
  • 1 cup corn, fresh, canned, or frozen
  • 1/2 lemon juiced

For Seasoning :

  • 1 tbsp coriander-cumin powder
  • 1 large bay leaf
  • 1 tsp 21 seasoning salute, I used Trader Joe's Brand
  • 1/4 tsp smoked paprika, I used Trader Joe's Brand
  • 1/4 tsp crushed black pepper
  • Himalayan Pink salt -adjust per taste


Directions: Instant Pot

  1. First, chop all your veggies. Open the can of black beans and rinse it under cold water.
  2. Next add everything in the main pot. This includes chopped veggies, corn, black beans, broth, tomato sauce, and all the spices.
  3. Stir them well so everything mixes well. Close the Lid , Valve on SEALING . Choose MANUAL to high pressure for 7 minutes. Set it and forget about it till it beeps !!
  4. Allow NPR. natural pressure release. After the valve is down, open the lid. Squeeze juice of half of lemon. Stir everything well. Your soup is now ready!
  5. Add all your favorite toppings, or simply swirl crushed tortilla chips into the soup for serving! Enjoy!
  6. For a thicker soup, feel free to add some corn tortillas (crumbled into pieces) to the soup. All those leftover tortilla chips at the bottom of the bag can be put to good use here!
  7. There is nothing better for hitting your comfort spot than delicious gooey cheese on top of warm vegies and bean broth. If you are not vegan, add any cheese esp. Cojito or Monterey Jack on top and let it melt some.

Stove top Instructions :

  1. Bring a large pot to medium heat and add a drizzle of your favorite cooking oil. Sauté the onion and garlic until edges are golden, then add all the vegies ,sauté well and cover to cook for 5 mins.
  2. Next add veggie broth, tomato sauce, beans, and spices; stir to mix. Let mixture come to a boil. Once it starts boiling, reduce heat to medium-low and simmer, covered, for15-20 minutes. The longer you let it cook, the more pronounced the flavor will be.
  3. Scoop out a bowlful, pile on the toppings, and devour the tasty vegetarian tortilla soup!
