    This Healthy Vegetarian Tortilla Soup will warm your heart and soul on cold, breezy nights. A staple recipe in our casa, it is so easy to prepare and tastes amazing. This gluten-free and Vegan Soup Recipe can be customized to your diet and taste preferences.

    This one pot tortilla soup is perfect for easy weeknight dinner. Similar to Creamy Gnocchi Soup, Wild Rice Soup and Vegan Stuffed Pepper Soup, my family enjoys this easy Instant Pot Soup Recipe.

    Come September, the chilly breeze starts to sweep the evenings. By nature’s rule, our bodies start craving comforting warm food. And we start to gather our stews and soups and chili recipes.

    This super easy and flavorful Healthy Vegetarian Tortilla Soup gives very satisfying dinner option. This soup is full of zesty flavors and so filling thanks to hearty black beans.

    This delicious soup can be made in an electric pressure cooker like Instant Pot , slow cooker, or on the stove top. It is one of our favorite soup recipe for cozy, comfort dinner.

    Eating less meat is better for your health and the environment. But that doesn’t mean you have to give up all your favorite dishes. This vegetarian tortilla soup recipe is delicious. Thanks to healthy fiber and carbohydrates,  it is so satisfying and will keep you full of hours.

    This vegetarian tortilla soup recipe is healthy, frugal, and tasty. It’s a favorite with meat-eaters and vegetarians alike!

    Instant Pot Tortilla Soup

    Plus this soup has good amount of vegetable serving, plant based protein and touch of spicy nourishment. It is perfectly balanced soup whole family will enjoy !

    Ingredients

    Exact measurements are listed in the recipe card below. The Vegetarian Tortilla Soup includes some fresh cut veggies like onion and green bell pepper. I use minced garlic for classic soup flavors.

    The main flavoring ingredient is Chipotle Peppers in Adobe Sauce. These canned peppers in sauce are easily available in most grocery stores in Mexican Food isles.

    We add a can of black beans and corn to bring the all the tex-mex feel to this yummy soup. For the soup base, use a can of crushed tomatoes or tomato sauce. I prefer to use fire roasted tomatoes for added sweet and smoky flavors. You can add low sodium vegetable broth for added depth of flavor but water works too.

    Some Delicious Topping Ideas

    Topping or garnishes is where all the fun is for this hearty yummy soup. For me crispy tortilla chips are the must. I also love variety of other toppings listed below. Choose one, choose two or all !!

    • chopped red onions
    • salsa
    • sliced avocado or guacamole
    • fresh chopped cilantro
    • jalapeño bites
    • radishes
    • Lemon / lime wedges
    • Sour Cream
    • Cotija cheese or Monterey Jack Cheese or any Tex-Mex style cheese

    Vegetarian Tortilla Soup Recipe in Instant Pot

    Press SAUTE and add oil to the main Insert. Once it displays HOT, add onions. Sprinkle some salt and sauté for couple minutes. Add the green pepper and minced garlic and sauté for 2 minutes. Stir in the adobe sauce, ground black pepper and cumin powder and sauté further for 1 minute.

    Add the tomatoes, beans, corn, water ( or broth ). Press and cancel SAUTE. Close the lid. Set the Instantpot to MANUAL or PRESSURE COOK to high pressure for 5 minutes.

    After it is done coking, wait for 10 minutes and then release the pressure. Open the lid. Taste and adjust the salt and seasoning if needed. 

    To serve, ladle the soup into bowls. Drizzle fresh lemon or lime juice. Top it off with tortilla strips, radishes, cilantro leaves and cheese. Enjoy !

    How To Make Crispy Tortilla Strips

    Pre heat the oven to 350 degree Fahrenheit. Using a pizza cutter, slice the tortillas into thin strips. Brush or spray some oil and sprinkle some salt over them. Place the strips on a baking sheet.

    Bake or Air Fry in a preheated oven at 350 degree Fahrenheit for 8 to 10 minutes until crispy and lightly browned. Remove promptly and use as a topping / garnish on the soup.

    Pro Tips

    For a thicker soup, feel free to add some corn tortilla chips (crumbled into pieces) to the soup while cooking. All those leftover tortilla chips at the bottom of the bag can be put to good use here.

    You can add variety of different vegetables besides the ones suggested. Broccoli, carrots, zucchini, green beans, red bell peppers are all good options.

    If you do not have adobe sauce easily available, use your favorite  Mexican spices, taco seasoning and smoked paprika. A tablespoon of fresh lime juice adds a wonderful zest to this soup.

    Ingredients
      

    For the vegetarian tortilla soup

    • 1 onion – thinly chopped
    • 1 green bell pepper – cut into bite size pieces
    • 4 garlic cloves – minced
    • 1 cup frozen corn – Fresh or frozen
    • 15 ounce cans black beans – drained and rinsed
    • 28 ounce can crushed tomatoes – fire roasted preferred

    For Soup Flavors

    • 1 Tablespoon adobo sauce from 1 can chipotle peppers in adobo sauce
    • 3 cups water or low sodium vegetable broth
    • 1 teaspoon cumin powder
    • Salt and ground black pepper

    For homemade tortilla strips

    • 6 round corn tortillas
    • Olive Oil or Oil Spray
    • Kosher salt

    Optional Garnishes

    • Sliced radishes
    • lemon or lime wedges
    • chopped cilantro leaves
    • cheese

    Instructions
     

    Make the tortilla strips:

    Stove Top Instructions

    • In a large soup pot or Dutch oven, heat olive oil on medium heat. Add the onion, sprinkle some salt and sauté until translucent, about 5 minutes.
    • Add the green pepper and minced garlic and sauté for 2 minutes. Stir in the adobe sauce, ground black pepper and cumin powder and sauté further for 1 minute.
    • Add the tomatoes, beans, corn, water ( or broth ). Bring it to a boil, then lower the heat and let it simmer for 10 minutes. Taste and adjust salt and the seasoning if needed. Turn off the heat.

    To serve

    • Ladle the soup into bowls. Drizzle fresh lemon or lime juice. Top it off with tortilla strips, radishes, cilantro leaves and cheese. Enjoy !

    Notes
