Ingredients
Sweet bell pepper: Sweet bell peppers add a beautiful pop of color. Makes the dish visually appealing, not to mention nutrient rich. Love it as part of the Eat the Rainbow concept. You can use multi colors or just one color.
Sweet onion: Adds a depth of pungent flavor. Caramelized onion is just Too Good with natural smoky sweetness all its own. You can use shallots or red onion as well.
Fresh Minced Garlic : For savory scrumptious flavor.
Zucchini : I love Zucchini as a roasted veggie. The tender and crisp Zucchini adds an amazing natural mild and sweet taste.
Broccoli : Another vegetable that tastes amazing when air fried. I use broccoli florets from store so it cuts down on cutting and prep time.
Olive oil: The olive oil adds a nutty delicious flavor. It also helps the vegetables crisp up while cooking. You can use other vegetable oil, cooking spray or oil mist as well. For WFPB cooking, simply skip using oil.
Seasoning: Italian Seasoning mix, salt, and black pepper add a nice flavor profile to these air fryer vegetables. If you like hint of spice, sprinkle red pepper flakes or smoked paprika on top.
Substitutes
Instead of listed vegetable medley, you can use other firm vegetables as well. Sweet potatoes, mushrooms, parsnips, different type of summer or winter squash or butternut squash are all good options.
Drizzling some balsamic vinegar on top and finishing off with parmesan cheese is a wonderful way to add additional flavor to these air fried vegetables.
How To Air Fry Vegetables
- Cut up all the vegetables and add them to a bowl.
- Next, add in the olive oil and seasonings and mix until well coated.
- Add the vegetables to the air fryer basket.
- Roast at to 400°F / 200°C for 12 minutes or until they’re cooked all the way. Open and shake the basket halfway through so the veggies cook thoroughly.
Pro Tips
- Cut your veggies as close to the same size as possible. This will help them cook evenly.
- Do not overcrowd the vegetables on the air fryer basket. Leave space so hot air circulates properly.
- Work in batches if needed. Do only a single layer of roasting at a time.
- Stir halfway through cooking. This will help ensure that your veggies cook evenly.

Air Fryer Roasted Vegetables
Ingredients
- 1 medium Red bell pepper make bite size pieces
- 1 medium Orange bell pepper make bite size pieces
- 1 medium Zucchini make bite size pieces
- 2 cups Broccoli Florets
- 1 Tablespoon extra virgin olive oil skip if WFPB
- 1 teaspoon Italian Seasoning
- Salt and pepper per taste
Instructions
- Cut up all the vegetables and add them to a bowl.
- Next, add in the olive oil and seasonings and mix until well coated.
- Add the vegetables to the air fryer basket in a single layer. Do not over crowd them.
- Roast at to 400°F / 200°C for 12 minutes or until they’re cooked all the way. Open and shake the basket halfway through so the veggies cook thoroughly.
- Remove Promptly. Adjust the seasoning if needed. Serve and Enjoy !
