- 3 large green tomatoes, roughly chopped
- ½ medium red onion, thinly diced
- 1 tablespoon each of cilantro and mint, chopped
- 1/2 cup coarsely crushed peanuts
- 1 to 2 green chiles, such as banana pepper or jalapeño, seeded and thinly sliced or finely chopped
- 1 tablespoon lemon or lime juice
- 1 tablespoon extra-virgin olive oil
- Freshly ground black pepper and salt to taste
Place tomatoes in a large mixing bowl and toss with the salt.
Add chopped onion, peanuts, sugar, cilantro, mint, chile peppers, lime juice and olive oil.
Toss well to combine. Add salt and pepper to taste. Enjoy
