Light Summer Salad
Green unripe tomatoes are semi sweet with distinctive taste. They are neither sweet nor sour. You also get a bit of firm crunch in every bite.
We pair them with red onions for a slightly pungent taste. One or two garden peppers for bits of spices. You can always adjust the amount of peppers to control the heat.
Drizzle some olive oil, add salt and sugar. With every bite, it creates flavor explosion. It's tangy, savory and delicious. The crushed peanuts add extra rustic dimension to the mix.

This salad is our family favorite summer meal, especially on those nights it’s too hot to cook. It's so refreshing and light since you use garden fresh tomatoes and herbs.
If you have a ton of tomatoes growing in your garden, or see some at the farmer’s market, make this salad. You will fall in love with it.
Starting late spring and throughout the summer these unripe tomatoes are abundant. And red tomatoes work just as well if you can’t find green ones.
SERVING IDEAS
We like to serve this beautiful salad as side dish with grilling recipes like Miso Glazed Grilled Veggies.
I also sometimes make an easy mezze platter for yummy easy and quick spread worthy of Al fresco summer patio dining.
This salad pairs really well with loaf of crusty bread. Similar to red tomato salad, let the bread sop up all those delicious juices at the bottom. That juice is so good, I often end up eating it till last drop.
Since the ingredients are so simple, the flavor really relies on the best green tomatoes and a good quality extra virgin olive oil. This salad tastes best when served at room temperature or even chilled.

How to Make
- Place chopped green tomatoes in a large mixing bowl and toss with the salt.

Green Tomato Salad Recipe
Ingredients
- 3 large green tomatoes roughly chopped
- ½ medium red onion thinly diced
- ½ cup coarsely crushed peanuts
- 1 to 2 green peppers such as banana pepper or jalapeño seeded and thinly sliced or finely chopped
- 1 Tablespoon lemon or lime juice
- 1 Tablespoon extra-virgin olive oil - skip to make it WFPB compliant
- 1 Tablespoon each of cilantro and mint chopped
- Freshly ground black pepper and salt to taste
