- 3 large green tomatoes roughly chopped
- ½ medium red onion thinly diced
- ½ cup coarsely crushed peanuts
- 1 to 2 green peppers such as banana pepper or jalapeño seeded and thinly sliced or finely chopped
- 1 Tablespoon lemon or lime juice
- 1 Tablespoon extra-virgin olive oil - skip to make it WFPB compliant
- 1 Tablespoon each of cilantro and mint chopped
- Freshly ground black pepper and salt to taste
Place chopped green tomatoes in a large mixing bowl and toss with the salt.
Add chopped onion, peanuts, sugar, cilantro, mint, chili peppers, lime juice and olive oil.
Toss well to combine. Add salt and pepper to taste. Enjoy !
