Ingredients

  • 3 large green tomatoes roughly chopped
  • ½ medium red onion thinly diced
  • ½ cup coarsely crushed peanuts
  • 1 to 2 green peppers such as banana pepper or jalapeño seeded and thinly sliced or finely chopped
  • 1 Tablespoon lemon or lime juice
  • 1 Tablespoon extra-virgin olive oil - skip to make it WFPB compliant
  • 1 Tablespoon each of cilantro and mint chopped
  • Freshly ground black pepper and salt to taste

Instructions

  • Place chopped green tomatoes in a large mixing bowl and toss with the salt.
  • Add chopped onion, peanuts, sugar, cilantro, mint, chili peppers, lime juice and olive oil.
  • Toss well to combine. Add salt and pepper to taste. Enjoy !

Notes

This salad pairs really well with loaf of crusty bread. Similar to red tomato salad, let the bread sop up all those delicious juices at the bottom. That juice is super delicious.
The ingredients are simple, so the flavor really relies on the best green tomatoes and a good quality extra virgin olive oil. This salad tastes best when served at room temperature or even chilled.
Feel free to substitute cilantro and mint with any other garden fresh herb you have in hand.
