    A quick and easy 10-minute recipe for homemade date nut balls made with just 4 ingredients! These no bake energy balls are sweet, sticky, chewy, and superbly rich and satisfying.

    These decadent and healthy energy bliss balls are vegan, gluten-free, Paleo and whole-30 compliant. It’s time to put those supermarket energy bars to rest and make these bite-sized treats instead .

    Similar to our Almond flour edible cookie dough, these date balls are perfect for grab n go breakfast, healthy snacking or even dessert.

    Ingredients

    Ingredients used in making this recipe.

    Dates : Dates are heart healthy natural sweetener with loads of healthy benefits. They are rich in protective antioxidants and support gut and bone health. For this recipe, I use pitted Deglet Noor dates. You can also use Medjool dates.

    Assortment of Nuts : For this recipe I used walnuts and almonds. I often a big bag of these from Costco in my refrigerator. You can use other nuts of your choice including pecans, hazelnuts or cashews. Peanuts which are technically legume and not tree nuts can be also used.

    Flavoring : A pinch of sea salt helps balance the flavors. I also use pure vanilla extract and ground cinnamon to add earthy rich flavors to these bliss balls.

    Substitutes

    Seeds : Pumpkin seeds, chia seeds and sunflower seeds can be used instead of or in addition to the tree nuts.

    Flavors : Store brought pumpkin Spice Mix is my absolute favorite to add especially during fall ad winter months. You can also use cardamom powder , ginger powder, nutmeg powder or combination of mulling spices to flavor these balls.

    Sweetener : Instead of dates, other dried fruits especially raisins, figs or apricots can be used.

    Coating : You can roll these balls in rolled oats, dry coconut or crushed peanuts for added level of texture. You can also dip them in melted chocolate to make Chocolate Covered Energy Balls.

    How to Make

    • Add the dates and vanilla extract to the food processer jar and blend it till they get soft and form a ball. Make sure to use pitted dates. Also if your dates appear too dry , add couple tablespoons of water to help make it grind easier.
    • Add the nuts in the food processor jar. Add pinch of salt and cinnamon powder in the jar. Blend it to desired level of texture. I prefer to coarsely blend it so there are bits and pieces of nuts left. You can grind it smooth powder too. Nuts release oil while grinding which we use to knead the balls.

    • Now mix in the dates and nuts mixture together. It should for a sticky dough. Use your hands or mix it with spatula.
    • Scoop out about 1 tablespoons of the mixture into your hands and roll them into a small bite size balls. You can also use small cookie scoop.

    Your Date and Nuts energy bites are ready. You can briefly put them in the refrigerator so they firm up. Otherwise store them in airtight container. Enjoy !

    Pro Tips

    • You can slightly toast the nuts on low heat so they release the oil and add a depth of flavor. I is optional but I highly recommend it.
    • I highly recommend you grind dates and nuts separately and then mix it together. Blending them at once creates unevenly ground nuts which does not have good texture.
    • I like cooking with dates. You will love our Carrot Cake with Dates which is full of natural sugar and warm flavors.

    Storage

    Store leftover energy snack balls in an airtight container. They will last about 10-14 days in the fridge.

    How to Freeze: Once you make these balls, freeze them on a baking sheet for 2 hours. Then transfer them to a freezer safe container. Thaw them in the refrigerator overnight before using.
