Flamenco Eggs is one of easy dinner recipe, that is simply irresistible delightful to make. This is my version of making the famous Spanish egg recipe ” Huevos a la flamenca” . Hope you like this mouthwatering yummy dish that is very easy to make. High in proteins and a good mix of colorful veggies make it very healthy too!
During our trip to Spain, we were blown away by their scrumptious and flavorful cuisine. Besides the rich cultural and historical tourist attractions, the highlight of our trip definitely was the gastronomical delights throughout different region’s of Spain. Our family loves exploring different Tapas places in America too. I love recreating some of those unforgettable tasty dishes at home.
Flamenco Eggs is a beautiful dish that is pleasing to the eyes and taste buds. The mini sweet peppers add a distinctive color to this dish. I like to sauté and bake it in my Lodge Cast Iron skillet for extra iron boost and evenly cooking. This sweet peppery dish with lightly set eggs is delicious, healthy and doesn’t required too much prep work or too many ingredients.
Colorful food elevates your mood along too. Life is beautiful gift and we should make it as much colorful and interesting as possible. Even the mundane tasks don’t feel such if you add little more life or color to it. On a gloomy , dark snowy days, delight your family and yourself with such simple creations. Trust me , it’s very worth it.
Simple and effective, this dish will delight all your senses. Egg Shakshouka is a similar version but I am not adding tomatoes in this this one. tomatoes tend to make this dish bit watery. I prefer the crunch of the vegetables and lemon juice gives enough tart . Let’s get going with making this recipe!
Ingredients:
1 lbs. Tri color mini sweet peppers or 1 medium size each red, yellow and orange peppers, seeded and thinly sliced
1 tbs olive oil
1 medium red onion finely sliced
3 garlic cloves minced
4 eggs
1 teaspoon lemon juice
1 teaspoon 21 seasoning salute or Italian seasoning
Salt per taste.
Crushed black pepper and cayenne pepper for garnish
Directions:
Preheat oven to 350°F. Heat the oil in your skillet ( lodge cast iron can go directly into the oven too) . Fry the garlic and onion gently for few minutes. Add the sliced peppers to the skillet and continue to fry for about 5 minutes. Add salt and seasoning. Peppers and onion should be soft. Turn off the heat.
Break one egg at a time on 4 spots. Sprinkle little black pepper or cayenne pepper on the egg yolk and around. Bake in the oven for 12-15 minutes until the white part of egg is clearly visible and lightly set. Scoop it out and serve warm.
