Eggs Flamenco - Spanish Style Baked Eggs With Vegetables
Flamenco Eggs is one of those dish, that is simply irresistible delightful. This is easy version of making the famous Spanish egg recipe ” Huevos a la flamenca” .

- 1 lbs. Tri color mini sweet peppers or 1 medium size each red yellow and orange peppers, seeded and thinly sliced
- 1 tbs olive oil
- 1 medium red onion finely sliced
- 3 garlic cloves minced
- 4 eggs
- 1 teaspoon lemon juice
- 1 teaspoon 21 seasoning salute or chile lime seasoning
- Salt per taste.
- Crushed black pepper and cayenne pepper for garnish
Preheat oven to 350° F.
Heat the oil in your skillet ( lodge cast iron can go directly into the oven too) . Fry the garlic and onion gently for few minutes. Add the sliced peppers to the skillet and continue to fry for about 5 minutes. Add salt and seasoning. Peppers and onion should be soft. Turn off the heat.
Break one egg at a time on 4 spots. Sprinkle little black pepper or cayenne pepper on the egg yolk and around.
Bake in the oven for 12-15 minutes until the white part of egg is clearly visible and lightly set.
Scoop it out and serve warm.
