Several years ago, I picked a beautiful box of Peppermint Chocolate Bark at Williams Sonoma store. It was so good and yummy that we finished it off within days.
I am always look out to make affordable food and homemade gifts. So decided to make chocolate bark at home. And soon realized that it was super easy to do. I am sure you will use this fail-proof recipe often , just like I do !

Ingredients
- Chocolate Chunks : Use your favorite – white chocolate, dark chocolate, semi sweet . You can use chocolate chips or bars .
- Peppermint Candies : You can use candy cane or peppermint candies. I like Starlight Mint variety.
- Coconut Oil : Helps to easily melt chocolate and get nice shiny glaze on top.
- Peppermint Extract : This is optional but if you like intense peppermint flavor, add couple drops . You can skip it if it’s not easily available.
Topping Variations
For holidays, Peppermint is the popular and favorite topping. You can use candy cane or peppermint candy. However, you can use variety of other toppings to decorate the chocolate bark.
I love to create seasonal chocolate barks to celebrate year round. Some rose petals and pistachio garnished bark for Valentine Day, pumpkin seeds and candies for fall / Autumn and cranberries and pecans for Thanksgiving.
- Holiday or seasonal Sprinkles
- Marshmallows
- Different nuts especially pistachio, pecans or hazelnuts
- Rose petals
- Dried fruit : dried raspberries, strawberries, cranberries or blueberries
- M&M candies
- Sea salt crystals
Instructions
- Line a cookie sheet with a parchment paper.
- Add the peppermint into a Ziploc bag. Using a small hammer or rolling pin, crush the mints to a course texture.
- Melt the chocolate using your preferred method. Stir in peppermint extract in the melted chocolate.
- Pour this melted chocolate mixture onto a parchment paper, and spread it in an even layer using a spatula. ( do it quickly)
- Sprinkle the crushed mints evenly onto the top of the layered melted chocolate, using a spatula, gently press down the mints so that it sticks to the chocolate.
- Set the baking sheet aside for an hour or until chocolate has completely set.
- Lift the set chocolate bark from the parchment paper. Break the chocolate bark into pieces as desired. You can break it randomly or into patterns.
- Store it in an air-tight container refrigerated.
How to Make Layers on the bark
Chocolate peppermint bark is typically made with white chocolate. You can use dark chocolate, semi sweet or white milk chocolate as well.
It also is easy to do a layered chocolate bark. Simply layer white and dark chocolate over each other. It looks prettier that way. I am showing white, dark and two layer bark in the picture.
Pro tips
- Use the BEST quality chocolate
- Don’t crush peppermint candy to hard. You want bits and pieces and not fine powder.
- Keep things ready before you melt chocolate since you have it spread it very quickly.
Recipe FAQs
You can use several different types of chocolates to make the bark. Use best quality chocolate for decadent and rich taste. You can use melting chips, plain chocolate bars as well as baking chocolate chips used for baking. You can also use candy melts but they taste too sugary and not as rich as real chocolate.
Adding a little bit of coconut oil helps chocolate chips melt smoothly. It also helps in evenly spreading the chocolate. You also get a nice shiny glaze on top once the chocolate firms.
Put the chocolate chunks in microwave safe bowl. Put the bowl in microwave. Using 30 second intervals, heat the chocolate. After every 30 seconds , take the bowl out and stir the chocolate well. You need about 2-3 minutes to get well melted chocolate. Melted chocolate can burn easily so keep an eye out.
Add 2 cups of water in the inner pot of Instant Pot. Place a trivet in the main insert. Place a bowl on top of the trivet. Add chocolate chunks to the bowl.
Turn ON Instant Pot on SAUTE mode (more). Once the water starts to boil, cancel SAUTE and press keep warm. Whisk until all the chocolate has melted, it will take around 4-5 minutes.
Double broiler is the traditional method of melting chocolate on stove top. Bring one inch of water to a simmer in a small pot. Set the heatproof bowl over the mouth of the pot. Add chocolate in the bowl. Stir chocolate as it softens. When you have just a few small un-melted chunks, remove bowl from heat and stir to melt the rest of the chocolate. Use immediately.
