Ingredients

  • 2 mangoes diced
  • 4 ripe peaches diced
  • 1 small onion fine cut
  • 1 jalapeno minced remove seeds before mincing to reduce the heat level
  • cup chopped cilantro
  • 5-10 mint leaves finely chopped
  • the juice of one lime or more to taste
  • Salt to taste

Instructions

  • Place all of the ingredients in a bowl and stir to combine. Enjoy right away. Refrigerate unused salsa covered tightly by food wrap.

Notes

This salsa tastes great when it's freshly made. It takes only 10 minutes to make it. If you want to make ahead and use it later, be sure to wrap the bowl completely with food wrap so it won't turn brown and soggy.
Chopped mint leaves wilt and turn brown fast. So I prefer to add the mint just before serving the salsa.
