Haluski - Cabbage Noodles

Haluski is made with fried cabbage and noodles with butter and pepper. Instant Pot haluski is family friendly one pot cabbage noodles dish that comes together under 30 minutes.

Ingredients

  • 2 Tablespoons butter use plant based butter or oil for vegan version
  • 1 large onion diced or thinly sliced
  • ½ head green cabbage sliced into ½" slices - remove tough parts
  • ½ cup peas frozen or fresh
  • 1 teaspoon all purpose seasoning
  • 8 ounces pasta I used gluten free rotini.
  • 3 cups low sodium vegetable broth or water
  • ½ teaspoon salt - adjust per taste
  • ¼ teaspoon ground black pepper

Optional Garnishes

  • 2 tablespoons flat leaf parsley basil or chives minced
  • Red pepper flakes
  • ¼ cup grated Parmesan cheese - use plant based for vegan

Instructions

How To Make Instant Pot Haluski

  • Press SAUTE on the Instant Pot, and when it reads Hot, add butter ( or oil) . Once it melts, add chopped onion, peas and cabbage. Sprinkle some salt and cook until onions are slightly soft.
  • Hit CANCEL, and use some of the water to deglaze pot, if necessary.
  • Add the pasta, broth and the seasoning. Give it a quick stir. The broth won't cover the pasta, but this is fine.
  • Place the lid on the pressure cooker. Vent is in the Sealing position. Press MANUAL or PRESSURE COOK for 4 minutes. Pot will take a few minutes to reach pressure, then begin cooking.
  • When Instant Pot finishes cooking, wait to keep warm timer for 5 minutes then release leftover pressure by moving the valve from SEALING to VENTING. 
  • When the pin drops, open the lid. Noodles will not be fully cooked, but start stirring everything together, and they will soften and cook as you mix them with the liquid from the pot.
  • Hit SAUTE and cook for 1 or 2 minutes to help reduce extra liquid if needed.
  • Scoop the pasta into a serving bowl or platter, and serve with garnishes as desired. Enjoy !

How To Make Haluski on Stove Top

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in pasta and return to a boil. Cook pasta uncovered, stirring occasionally, until tender but still slightly firm, about 7 minutes. Drain well.
  • Meanwhile, melt butter in a large skillet over medium-high heat and cook onion until soft and translucent, about 5 minutes.
  • Add cabbage and peas and cook until soft and almost brown, 10 to 12 minutes. Add cooked pasta and stir well. Season with salt and pepper and garnish with cheese,  herbs and red pepper. Serve and enjoy!
