Ingredients

  • 1 cup low-fat cottage cheese
  • 1 teaspoon maple syrup
  • ½ cup fruit I used strawberries and blueberries
  • ½ cup granola
  • teaspoon vanilla and cinnamon powder optional

Optional additional toppings

  • 1 Tablespoon soaked chia seeds, coconut flakes

Instructions

  • Start by mixing the cottage cheese with maple syrup and vanilla extract.
  • Layer the fresh fruit on the bottom of the jar. Then spoon the cottage cheese mix and layer it over. Add another layer of fresh fruit on the top.
  • Top it off with granola and dusting of cinnamon. Serve and enjoy!

Notes

You can also make these parfaits in bulk and freeze. They are perfect for grab-n-go breakfast in the morning. I also love them for easy lunch, healthy snack or as a side dish.
