Ingredients

  • 1 (14 oz.) pack tofu extra firm preferred, drained and pressed
  • 1 Tablespoon Cooking Oil
  • 1 Chipotle in Adobe Sauce use 1 chipotle pepper and 2-3 Tablespoons adobo sauce - adjust to taste
  • 2 Tablespoons tomato paste
  • ½ teaspoon Cumin powder
  • ½ teaspoon onion and garlic powder or onion salt
  • Salt and pepper to taste

Instructions

  • Prepare the Tofu: Press the tofu to remove excess moisture, then crumble it into small pieces.
  • Cook the Tofu: In a skillet, heat olive oil over medium heat. Add the crumbled tofu and cook until it starts to brown.
  • Add the Flavor: Pour in all other the sofritas seasoning along with salt, and pepper. Stir well to coat the tofu evenly.
  • Simmer: Add the a splash of water or broth and let it simmer for 8-10 minutes, allowing the flavors to meld together.
  • Serve: Spoon the sofritas into tacos, burrito bowls, or over a bed of greens for a delicious, spicy meal.

Notes

Adjust the spice level by varying the amount of chipotle pepper and adobo sauce to suit your taste.
Store leftover tofu sofritas in an airtight container in the refrigerator for up to 4 days. For longer storage and meal prep, freeze in a sealed container. Simply thaw and reheat when ready to enjoy.
