  • Prepare the tamarind base. In a large pitcher, combine the tamarind nectar, agave syrup, and chaat masala. Stir well until the agave is dissolved and the spices are evenly mixed.
  • Chill until ready to serve. Refrigerate the tamarind mixture until you're ready to serve. You can prepare this base a few hours ahead.
  • Add the fizz. Just before serving, slowly pour the chilled ginger ale into the pitcher. Stir gently to combine without losing too much carbonation.
  • Prepare the glasses. Spread chamoy sauce on a small plate. Dip the rims of your serving glasses into the chamoy to coat them. For extra flavor, sprinkle a little chaat masala onto the rims.
  • Serve over ice. Fill the prepared glasses with ice and pour in the tamarind mocktail. Garnish with fresh lime wedges or mint, if desired.
