Sweet Potato Brownies

These 5 Ingredient sugar-free Sweet Potato Brownies are simply the best fudgy brownies you will ever make. These Grain Free Brownies are decadent, rich, moist, low calorie and sneakily healthy too.

Ingredients

  • 3 cups sweet potato puree roughly 3-4 medium sized sweet potatoes
  • 1 cup almond butter
  • ½ cup cacao powder
  • pinch of sea salt

Instructions

  • In a large mixing bowl, add sweet potato purée, maple syrup, almond butter, cacao powder, salt  and stir to combine.
  • Transfer batter to your greased or parchment-lined baking dish and spread into an even layer about an inch thick. You can use a spoon or rubber spatula to spread evenly.
  • Gently tap the pan few times on the counter so the air bubbles are eliminated.
  • Oven : Bake in the preheated oven on the center rack (at 350 F / 176 C) for 35-40 minutes.
    Or
    Air Fryer : If you want to use air fryer, use (at 350 F / 176 C) for 20-25 minutes.
  • The brownie edges should appear slightly dry and a toothpick inserted into the center should come out mostly clean (a few crumbs are okay, but it shouldn’t be wet). Remove from oven ( or air fryer) and let cool for 15-30 minutes.
  • Lift out of pan and slice. Enjoy warm or room temperature. Store leftovers covered at room temperature up to 3 days, in the refrigerator up to 5-7 days, or in the freezer up to 1 month.
  • Similar to classic brownies, serve them as is , or with a scoop of vanilla ice cream. Enjoy !

How to Steam Sweet Potatoes in the Instant Pot?

Add 2 cups of water in the main insert. Put a steamer basket or trivet in the bottom of the Instant Pot. Place sweet potatoes on top of the steamer basket. Secure the lid and turn valve to seal. Use the manual or Pressure cook mode and set to pressure cook on high for 8- 15 minutes. ( depending on the size of sweet potatoes )Let the pressure release naturally for 10 minutes. Once you open the lid, let them cool down. Then remove the skin and mash into puree.

A note on Baking Times

As mentioned, these are soft and moist brownies. The cooking time varies based on you use glass or metal bakeware. Also spread the batter evenly and make no more than 1" thick layer. The brownie edges should appear slightly dry and a toothpick inserted into the center should come out mostly clean
