  • ¼ to ½ cup water

Useful Kitchen Items

Instructions

  • Combine all ingredients in your blender and blend until smooth.
  • You may have to scrape the sides a couple times. If consistency is too thick, add more olive oil, or water a tablespoon at a time.
  • Taste for seasonings and adjust accordingly.
  • Transfer to a glass jar; close with a lid and keep refrigerated until ready to use.

Notes

If you don’t like cilantro, you can use fresh parsley or basil. However only use ½ cup since both parsley and basil are stronger in taste.
I love adding a clove of fresh garlic in the dressing. If you do not like the taste or aroma of raw garlic, simply omit it.
For WFPB cooking, you can omit the oil. Even though oil helps to emulsify the dressing smoothly,  it will be still creamy because of healthy avocado fats.
I prefer to make and use this dressing fresh. It tastes best when fresh as well. If you plan to keep it for extended periods of time,  add a teaspoon of vinegar. It works as a preservative.
