- 4 large eggs
- 2 tablespoons milk
- ¼ cup finely chopped onion
- 1 green chili finely chopped
- 2 tablespoons fresh cilantro finely chopped
- ½ teaspoon garam masala
- ¼ teaspoon red chili powder adjust to taste
- ¼ teaspoon salt or to taste
- 1 tablespoon cooking oil
Crack the eggs into a mixing bowl. Add milk and whisk until light and well combined.
Add chopped onion, green chili, cilantro, garam masala, red chili powder, and salt. Mix well.
Heat oil in a nonstick skillet over medium heat.
Pour the egg mixture into the skillet and gently spread it into an even layer.
Cook for 2–3 minutes, or until the bottom is set and the edges are lightly golden.
Carefully flip the omelette and cook for another 1–2 minutes, until fully cooked.
Fold and serve hot with toast, roti, paratha, chutney, or a side salad.
- Make it fluffy: Whisk the eggs and milk well before adding the vegetables and spices.
- Adjust the heat: Reduce the green chili and red chili powder for a milder omelette.
- Add more vegetables: Diced tomatoes, bell peppers, spinach, or mushrooms make delicious additions.
- Serving idea: Serve with mint chutney, cilantro chutney, toast, or warm roti.
Pro Tip: Cook the omelette over medium heat rather than high heat. This helps it cook evenly while keeping the eggs soft and tender.
