Ingredients

  • 2 cups Plain yogurt whole milk or low-fat yogurt
  • 4 cups Cold water Adjust for desired consistency
  • 1 teaspoon roasted cumin powder Freshly roasted for best flavor
  • ½ teaspoon ginger minced , add more for spicy
  • ½ teaspoon black salt Kala Namak - Adds authentic flavor. Use regular salt if you don't have kala namak.
  • ¼ cup fresh cut mint leaves or coriander leaves
  • 1 pinch asafetida Hing , optional

Instructions

Blend the Yogurt

  • Add yogurt to a large mixing bowl. Pour in chilled water and blend until completely smooth and frothy. In India, typically a wooden churner is used. You can also use blender, hand mixer, whisk or a buttermilk churner.

Add Seasonings

  • Add roasted cumin powder, black salt, minced ginger, and herbs.

Blend Again

  • Blend for a few seconds until everything is fully combined.

Chill and Serve

  • Pour into serving glasses and enjoy immediately. Garnish with additional cumin powder, chopped cilantro, or mint leaves.

Notes

Is Mattha the same as Chaas?

Yes. Both are traditional Indian yogurt drinks. The name varies by region, and recipes may differ slightly in seasoning or consistency. Chaas also is often called masala chaas. 

Can I make chaas with Greek yogurt?

Yes. Thin Greek yogurt with extra cold water until you reach a light, pourable consistency.

Can I prepare Indian buttermilk ahead of time?

Yes. Refrigerate it for up to one day and whisk before serving if any separation occurs.
