Instructions

  • Start by adding rolled oats, chia seeds, sugar, saffron, cardamom, and nutmeg to a jar or container. Pour in the almond milk.
  • Stir everything very well. Make sure the chia seeds are thoroughly soaked. Cover the container and refrigerate overnight.
  • The oats will absorb the almond milk as they sit. The chia seeds will also swell and thicken the mixture.
  • In the morning, give the oats a good stir. If they are thicker than you like, add a splash of almond milk (or water) and mix again.
  • Top with chopped almonds and pistachios. For an extra festive presentation, sprinkle a few rose petals and a tiny pinch of saffron over the top.
  • Your Indian dessert inspired overnight oats are ready to enjoy.

A note about Kheer Overnight Oats- My Fusion Recipe

Traditional kheer is made by slowly cooking milk and rice with sugar and fragrant spices. These overnight oats are not traditional kheer, but they borrow some of those familiar flavors and turn them into an easy no-cook breakfast.
I love taking familiar Indian flavors and giving them a fun little twist in my kitchen.
These fusion recipes let me enjoy the spices and flavors I grew up loving in new and unexpected ways. This recipe is my take on bringing those comforting Indian dessert flavors into an easy everyday breakfast.
