Heat the oil on medium high heat.
Make the batter: Add all the dry ingredients into a bowl and mix. Add water and whisk to make a smooth batter. You want the batter to be thick. The consistency should be like a pastry so that it sticks well to the flowers.
Dip the zucchini flowers in the batter, and gently roll them so that each flower is covered with batter. Carefully drop couple of dipped flowers in the heated oil.
Fry till golden brown on all sides. Using tongs, remove the fritters and let them rest on dry paper towel to absorb excess oil. Serve hot along with desired condiments.
How to bake or air fry fried zucchini flowers
Instead of deep frying, you can do these fritters in air-fryer or bake them in oven. Coat all the zucchini flowers with batter of chickpea flour and seasoning. Arrange them in single layer on the air fryer basket or baking tray
Lightly spray some oil mist. Use 325 Fahrenheit temperature setting for 10 minutes. Flip them upside down and bake for another 5-8 minutes until golden brown from all sides. Enjoy warm.
1) You will need about 1 cup oil to dip the pakoras properly for frying however, not all oil will be used in frying.
2) Once fried, these fritters won’t hold their crisp exterior for long, so eat right away! They do not taste good reheated either so fry only as needed.
