What a healthy stew and I love all the spices used, especially the cinnamon. This is healthy winter comfort food personified!

In middle of dead winter season where temperatures are struggling to stay above freezing, you need this comfort food. 

WHAT ARE THE INGREDIENTS

– Olive oil – Onion – Garlic, – Carrots – Celery – Sweet potatoes – Spinach  – Red bell pepper – Green or brown lentils – Low sodium vegetable broth or water – Lemon juice and lemon wedges for serving – Chopped cilantro or parsley and jalepeno peppers, for garnish

1. Turn on the SAUTE button on your Instant Pot and add the oil. When heated, add the onions and sauté for 2-3 minutes until slightly translucent.
