Ingredients

  • 2 cups whole rolled oats - I used certified gluten free
  • ½ cup chopped walnuts
  • ½ cup pumpkin seeds
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup
  • 2 teaspoons ground cinnamon
  • ½ teaspoon sea salt

Instructions

  • Preheat the oven to 275° Fahrenheit and line a baking sheet with parchment paper.
  • In a medium bowl, combine the oats, walnuts, pumpkin seeds, ground cinnamon, and salt.
  • Drizzle in the melted coconut oil and maple syrup.  Stir until combined.
  • Scoop the granola mixture onto the baking sheet and pat it down with spatula or by hand. This will help it clump it down some.
  • Bake for 15 minutes, rotate the pan halfway. Gently stir the granola with the spatula. Continue to bake for additional minutes, or until golden brown.
  • Let cool for 15 minutes before serving. Enjoy !

Air Fryer Instructions :

  • In a medium bowl, combine the oats, walnuts, pumpkin seeds, ground cinnamon, and salt. Line the air fryer basket with perforated parchment paper.
  • Drizzle in the melted coconut oil and maple syrup.  Stir until combined.
  • Scoop the granola mixture onto the air fryer basket. Choose bake/ air fry option at 250 degree Fahrenheit for 15 minutes.
  • Midway through, open the lid and gently shake the tray and stir the granola with the spatula. Continue to bake / air fry for additional minutes, or until golden brown.
  • Let cool for 15 minutes before serving. Enjoy !
