Ingredients

  • 2 pounds Fingerling potatoes cleaned
  • 1 tablespoon Olive oil or use oil spray
  • 3-4 Garlic Cloves minced
  • 1 tablespoon Chopped parsley
  • 4 tablespoons Grated Parmesan cheese divided
  • Salt and freshly ground black pepper to taste

Instructions

How To Air Fry Fingerling Potatoes

  • Preheat an air fryer to 400° degrees Fahrenheit (200 degrees Celsius) for 3 minutes.
  • Place washed and cleaned potatoes in a mixing bowl. Add olive oil, half of the Parmesan cheese,  minced garlic, salt, and pepper and toss until evenly coated.
  • Place potatoes in the basket of the preheated air fryer and cook for 10 minutes. 
  • Open the lid. Shake the basket and cook until desired crispness is reached, about 5 more minutes.
  • Remove from the air-fryer.  Sprinkle the parsley and remaining Parmesan cheese on top.  Serve immediately with your favorite dipping.  Enjoy !

Notes

How To Make Oven Roasted Fingerling Potatoes?
You can bake these in the oven at 400 degrees Fahrenheit for about 18-20 minutes or until they are crispy. If possible,  use a crisper basket instead of a baking sheet.
Preparing the Fingerling Potatoes for roasting:
Since we are not peeling and removing the skin,  wash the fingerling potatoes in the colander thoroughly under clear running water. Scrub if there is any dirt, dark spots or extra tuber growth on the surface.
After washing, pat them dry completely with a kitchen towel. No moisture should remain. This is important to get them nice and crispy.
How to reheat ? Arrange them in a single layer on the airfryer basket.  And re-heat in the air-fryer for 4-5 minutes at 350°F.

If Using Instant Pot Air Fryer Lid or Crisp Lid

Arrange the potatoes in a single layer on the basket. Place the basket on the trivet. Cover and secure the Instant Pot with air fryer lid. ( or crisp lid)
Air fry at 400 Fahrenheit ( 200 Celsius) for 15 minutes until the potatoes look wrinkled and start turning golden brown.
